    Ik this was 2 years ago but I came from Claire’s video and THANK YOU, your video IS much easier to follow as a beginner. She didnt even specify measurements!! I dont think you were wrong in pointing out there was a “problem” w that vid, I like her and im sure you do too!! Im currently proofing my dough rn so excited.

    Just saying, Claire says to go by recipe descriptors, not go by approx times. The dough you made using AP flour looks like the pics in her recipe throughout, so maybe you just didn't get enough gluten developed in the first batch? That would explain the tearing and the lack of a smooth-looking dough. I think the PROBLEM here is that you (a) are loosely interpreting the specifics of the method; (b) You are compromising on steps that are integral to the end result that you seek.

    @FlamBae 👎👎 WHY even pretend that this is a comparison between the two UA-cam recipes⁉️ When you use so few ingredients, they need to be the ingredients that are called for! 9 grain bread flour is not the same as bread flour! And your Frankenstein concoction of All purpose, plus 00, plus whatever, NO! You did not rest Claire Saffitz's overnight in the fridge, you did not use her two oven racks, with the time on each. And, adjusting the salt because you don't have Diamond Crystal kosher salt? What "chef" doesn't have SOME brand of kosher salt? I'm "roasting" your DISLIKE button👎👎👎🔥🔥

    I make this recipe multiple times a year. I use yukon gold potatoes and a mix of heavy cream and whole milk. I also use a whole bulb of garlic cut in half. I think the infusion is definitely worth it - just needs to sit for longer! Great video!

    I used her recipe last winter but only had AP flour, but it came out amazing. I just bought some bread flour and plan to try it this winter. I also don't like to wait overnight for it to rise, so I just let it set by my fireplace for a few hours.
