I've seen those side circles spin. What does that mean?
It’s the horizontal stablizer trim wheels. Moved automatically on the A320.

GPS is just part of IRS (embedded), many options available without GPS. Radio Nav (VOR/ILS), ADF, TACAN (for military), also DME available. Again, for aviation, GPS is just optional

Really? Celestial navigation? If you lose GPS your fine for hours with the IRSs and even better if you have rad navs nearby. The problem is not losing GPS but having wrong GPS indications, that is what can complicate things as it will corrupt the FMGC position calculation. You'd have to deselect GPS and probably update your position with a known nearby rad nav. What NOBODY would do is celestial navigation 😂
Hello! This is only a demonstration of methods that are available. Human instincts are also a factor that needs to be taken into account. A good example is the Varig Flight 254 when passengers tried to say to the cabin crew that the sun should not be in the position that it was and the pilots actually had made a fatal mistake. The ditching switch, as pursuant of the FCOM (I believe), immediately opens up the Ram air inlet doors in the fuselage, opens the outflow valve to maximum, and I believe sets a differential pressure value that is sufficient for flotation.
Can you have full control over the thrust over any time.
Yes, even if auto throttle is active, the thrust can still be manually controlled by the pilots at any time

I'm guessing the boeing 737 thurst levers work differently?
On the a320, with the thrust levers in the same position during the entire flight, the autothrottle controls the amount of thrust electronically depending on what is required. On a 737, the position of the thrust lever directly controls the thrust amount from that engine and the autothrottle physically moves the levers to the required position.
