Easy Mackerel (Sgombro) Pasta, Seafood dish in 15 Minutes!

Looking for a delicious and easy seafood pasta recipe? This mackerel pasta is the perfect solution! Ready in under 15 minutes, it's a quick and healthy meal that's both flavorful and satisfying. The rich taste of mackerel pairs beautifully with al dente pasta, creating a dish that's sure to impress. Whether you're a fan of Italian cuisine or simply love seafood pasta, this recipe is a must-try. Perfect for busy weeknights or a quick lunch. Let's get cooking!
Ingredients (serves 4):
1. Capers in salt
2. Extra Virgin Olive Oil
3. Chalots - 2 small (we also used spring onions this time)
4. Garlic - 2 cloves
5. Anchovy paste (or anchovies)
6. Cherry tomatoes - about 15
7. Olives - about 15, black, seeded
8. Mackerel (Sgombro) in olive oil - 2 tins (125 g each)
9. Fresh parsley
10. Pasta - we prefer "Farfalle"
Method:
Start with your pasta water. While the pasta is cooking...
Pour a 1/4 glass of water into the pot on medium fire, add about 15 capers in salt. Stir and let the capers release the salt while the water is evaporating. Cut onions and, smash and cut into 2-3 pieces the garlic. When the water is almost evaporated, add olive oil, onions, garlic and olives. Stir. Add about five cm of anchovy paste. Mix. Pierce the cherry tomatoes (no need to cut them) and add them into the pot. Mix a bit and let everything cook for a couple of minutes. Add mackerel with the oil from the tin (please make sure it is olive oil). Crush the fish into bite-size pieces, but don't mash it too much. Add parsley. Let it cook for a couple of minutes. The sauce is ready. Switch off the fire and set the pot aside.
When the pasta is ready, just add the cooked pasta to the sauce. Mix gently (you don't watch to mash the fish) and serve hot topped with a bit of fresh parsley. This is an official seafood cheat meal in our family. I hope you will enjoy it too!

Ingredienti (per 4 persone):
Capperi sotto sale
Olio extravergine di oliva
Scalogni - 2 piccoli (abbiamo usato anche cipollotti questa volta)
Aglio - 2 spicchi
Pasta di acciughe (o acciughe interi)
Pomodorini - circa 15
Olive - circa 15, nere e denocciolate
Sgombro (in olio d’oliva) - 2 scatolette (125 g ciascuna)
Prezzemolo fresco
Pasta - preferiamo "Farfalle"
Metodo:
Inizia con l’acqua per la pasta. Mentre la pasta cuoce...
Versa 1/4 bicchiere d'acqua in una pentola a fuoco medio, aggiungi circa 15 capperi sotto sale. Mescola e lascia che i capperi rilascino il sale mentre l'acqua evapora. Taglia gli scalogni e schiaccia e taglia l’aglio in 2-3 pezzi. Quando l’acqua è quasi evaporata, aggiungi l’olio d’oliva, gli scalogni, l’aglio e le olive. Mescola. Aggiungi circa 5 cm di pasta di acciughe. Mescola. Bucherella i pomodorini (non è necessario tagliarli) e aggiungili nella pentola. Mescola un po' e lascia cuocere per un paio di minuti. Aggiungi lo sgombro con l'olio della scatoletta (assicurati che sia olio d’oliva). Sbriciola il pesce in pezzi della grandezza di un boccone, ma non schiacciarlo troppo. Aggiungi il prezzemolo. Lascialo cuocere per un paio di minuti. La salsa è pronta. Spegni il fuoco e metti la pentola da parte.
Quando la pasta è pronta, aggiungi la pasta cotta nella salsa. Mescola delicatamente (senza schiacciare troppo il pesce) e servi caldo, guarnito con un po' di prezzemolo fresco. Questo è un piatto di pesce che facciamo spesso in famiglia. Spero che ti piaccia anche a te!

Use a spatula to carefully flip the crepe and cook for an additional 30 seconds to 1 minute on the other side. Transfer the cooked crepe to a plate and fill it with your desired toppings or fillings. Fold or roll the crepe as desired and serve immediately. Repeat the process with the remaining batter, stacking the cooked crepes on a plate and covering them with a kitchen towel to keep them warm. For an extra touch of freshness and flavor, serve your ham and cream cheese crepes with a side salad dressed with a light vinaigrette. The crisp, tangy greens provide a refreshing contrast to the rich and savory crepes, making it a well-balanced and satisfying meal. Enjoy! Perfect the Pour: When pouring the batter into the pan, tilt and rotate the pan to spread the batter evenly in a thin layer. Aim for a smooth, circular shape for uniform crepes. Please wash the eggs and leave them on the counter for 30 mins before cooking. 2. Take your Mascarpone out of the fridge 30 minutes before cooking. 3. Separate your egg whites and egg yolks well. 4. Make sure your coffee is room temperature before cooking. 5. Scout for the best savoiardi (lady finger cookies) - the good ones have just a few items on the ingredient list: sugar, flour, eggs, raising agent and natural flavorings. 6. If you need to break the cookie to fit it into the cup, the rule of thumb is - first break, then dip into the coffee. Method: In a shallow bowl, combine the cooled coffee or espresso. Set aside. Separate egg whites and egg yolks. In a mixing bowl, beat the egg whites until stiff peaks form. In a separate bowl, mix egg yolks and granulated sugar until smooth. Gradually add mascarpone cheese to the egg yolks. Mix well. Gently fold the whipped cream into the mascarpone cheese until well combined. Be careful not to overmix to maintain a light and fluffy texture. Spoon a layer of the mascarpone mixture at the bottom of each serving cup. Dip each ladyfinger cookie into the coffee mixture for a second, very briefly, ensuring they are soaked but not overly soggy. Arrange a layer of soaked ladyfingers on the mascarpone layer. Repeat the layers with another layer of mascarpone mixture followed by a layer of soaked ladyfingers until the cups are filled or you've used all the ingredients, ending with a layer of mascarpone on top. Cover the cups with plastic wrap and refrigerate for at least 3-4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set. Before serving, dust the tops of the tiramisu cups with unsweetened cocoa powder using a fine mesh sieve. Serve chilled and enjoy the irresistible flavors of this easy tiramisu in a cup!
