What is the thickness of the pieces of jerky?

I find if you grind the pork and venison together it makes a great mix

Please let me know where to order the adjusting bolt and spring for it . I lost it

The only problem to me is the thickness, instead of 1/4 inch I would prefer 3/16 or even 5/32, I wouldn't go as small as 1/8.
