We brewed this beer about two months ago, and in that time, I welcomed my second kid into the world. Unfortunately, the guys haven’t been over to try the beer yet, but we’re hoping to get back to our regular brew days in January-February at the latest. A quick note: everything that could go wrong with this video did. We lost audio, and some footage accidentally got deleted. Thanks for sticking with us through it all. Cheers!

@@BrewNub For example, the cold ipa (cream ale) that you make is basically a BR ALE that we have been doing for more than 5 years we already have many communities and seek the inclusion of it in the bjcp as a Brazilian style as well as Catharina suor, Brazil in recent years has evolved a lot in this issue with the production of high quality national malt, noble hops adapted to a tropical climate and also the discovery of a new Star Brasilis yeast.

The name of the yeast species is Starmerella meliponinorum, and Star Brasilis is the trade name, and, which in fact fit very well, because it is really a star, the only one that was found in Brazilian lands

When you bottled this particular beer did you still end up with a little sediment in bottom? I did and I’m not sure why, did everything normal, liquid was clear from sitting for days, started at top and worked down as liquid dropped, used the filter attachment for the racking cane and all. I wonder if I got a siphon with a mesh screen if it would do better.
That is the yeast sediment, which is perfectly normal. When you bottle condition you're adding in sugar to carbonate your beer. The remaining yeast is eating up the sugar and dropping the yeast sediment to the bottom of the bottle.

Your mash temperature after mashing in was too low. You should be mashing in at 152 the lowest. You set the temp to 160 so when it drops it’s not going to go to low for mashing in. That’s now going to be on the sweeter side.
I guess I don’t mind as much for the brown ale being a bit more sweeter. I’ve always enjoyed browns ales with honey. Although, I will keep that in mind for futures brew. Thanks for the feedback 🤘🏽
