Deboning a Thanksgiving turkey - Split back method
Chef P takes you through the method he uses to debone a turkey. This saves cooking time, oven space, allows for juicy meat seasoned on all sides. Also gives a cook time to roast the bones separately in order to make a delicious reduced stock that will serve as a tasty base for a great gravy... and have lots of it for Thanksgiving dinner.

Follow Chef P on this multi-part process of curing a pork ham (Italian Style) into delicious Proscuitto. A 10-month process, but worth the wait. During this step, we will rinse off excess salt, bathe the ham in red wine and massage it with pepper. Then, attach a rope to hang it from.
