Is "tataki" the way you cut the fish?

I don’t know why I’ve never thought to cook up the bones once I’ve finished the meat. I grew up catching rainbow trout which is a very bony fish and it becomes very messy to eat because you have to sit and pick them out. But you can eat bones so long as they have been softened by frying them, so why haven’t I just done that? I’ll definitely try it next time
