Red Curry Recipe with Chicken and Chili Paste #Thaifood
Red Chicken Curry with Chili Paste ( Nam Prik Pao ) In Thailand called Pad Prik Gaeng Nam Prik Pao.
Spicy and delicious with the taste of Kaffir Lime Leaves and fresh sweet Basil.
- what we need (for 3-4 people)
- 400 - 500gr. Chicken Tighs
- 2-3 Tbsp. Red Curry Paste
- 2 Tsp. Chili Paste
- 10-12 Kaffir Lime Leaves
- 150 - 200gr. long Thai Beans
- 1 bunch Sweet Basil
- 2 big Chili Peppers
- 2-3 Tbsp. Fish Sauce
- 1 Tbsp. Oyster Sauce
- 1 Tbsp. Soy Sauce
- 1 Tsp. Palm Sugar
- about 100ml Chicken Stock (if you like more sauce use more)
- some Coconut Cooking Oil

Great recipe with original taste. I just increased the number of chilis to 16 and added 2 more Habanero chili. After dinners there was nothing left.

You stated lemon, but the lemon i see are green? What kind of fish sauce did you use?
I like to check out other variations of this great curry. I have used Andy Ricker's POKPOK recipe and it follows along with this pretty closely. No peanuts, and I couldn't find or prepare pickled garlic in a timely enough manner so simply used raw doggin' garlic cloves.

Everything is fine, but I am skeptical about the long cook time for the vermicelli noodles. I’m a noodle nazi and hate when certain noodles lose their “al dente” factor.

Your Pad Kaprao was light bc that's Light Soy Sauce not Dark. 😅 But that's OK. Dark Soy Sauce is not a must in Pad Kaprao. 😊

Hi, could I had an print out recipes ingredients for this dish. It to fast to follow the on screen scripts. Many tks.
Glen Hong is right (Duck meat is considered as red meat in Europe) but once grilled add 1/4 tea spoon Baking powder too the meat and let it a side for 20 min. or until ready too add to the recipe. This will make the meat soft as you have never seen, this trick is also good for any meat... From chicken Brest too lamb, beef, pork :) This trick as changed my textures game for so many recipe :) I personally will even try before roasting the meat !!
I can’t find holy basil where I’m from
“Beef stock” what is it please ?
It is beef bones that has been cooked for a couple of hours then drained to have a clearer liquid so that it is not cloudy. Any beef bones boiled up will be fine. We do a big batch then freeze some in plastic bottles.( A good ratio is 2 kilo of bones to 3 litres of water, reduced to about 2 litres , let it boil first then simmer on low)Hope that helps

I had thought it one table spoon of oyster sauce, one table spoon of fish sauce, half tablespoon of dark soy. No need for sugar. And that's for 500g of pork mince. Easy cheat: as basil is getting expensive, and you can't find holy basil near here, a tablespoon or so of even a cheap basil pesto can give enough basil hint to keep things tasty. I've not problem with half a small onion with the garlic - take it or leave it. But the sugar doesn't seem necessary with the reduced sauce amounts. Add a bit of stock or water if necessary - but not too much. For a small variation, even a bit of lemon juice can make for a tasty difference.
