Unraveling the Magic of Natural Process Coffee - Exploring Las Mercedes Coffee Farm in Costa Rica
Remember coffee drinkers, the expert on coffee is you. I am in the coffee business and often coffee experts like to say there is a wrong and right way to sell you expensive things you don't need like timers, decanters and so on. The right way is your way. Here is my way with French press. I use a tablespoon of fine ground coffee per coffee mug of water. This comes to 10-12 grams of coffee per 250 ml of hot water. It isn't rocket science so eyeball it. I use boiling hot water. After putting the coffee and water in the french press, I let it sit but don't time it. Not necessary in my view. I have training in coffee cupping. In blind tests I cupped French press coffee comparing my normal routine with letting the boiling water sit before brewing it, timing the brew (coffee plus water) for a few minutes before drinking it, mixing the coffee and water in the french press and skimming. The difference was negligible in my view and I prefer my own way. But I like my coffee as hot as humanly possible. What makes the most difference is the quality and freshness of the coffee, using fine ground coffee and filtered water. And making the coffee in the way you prefer.
I use espresso roast beans. Because that’s what you need if you want that powerful espresso flavor. All these baristas these days using non espresso roasted coffee for espresso drives me crazy. Also you need way more grounds than what she used for the espresso style. I don’t measure or weigh because I’m not a nerd I can eyeball it just fine after making it the way I like it once 😂
Excellent video. Tried, and approved.😎
Great job!
Great video, congratulations on the content! However, one thing caught my attention regarding espresso. In theory, espresso should have lower acidity, but in practice, it's not quite like that. Espresso tends to have a certain level of acidity, doesn't it?
Yes, espresso has some acidity but less than other methods, cold brew is the low acidity king!
@ good!
I am old school, why are you calling a percolator, a moka pot....
Percolators are slightly different to moka pots, I used to think they were the same thing too.
And I know there different animals, and price; 9barista vs bialetti ?
I'm looking for a darker, almost espresso cup. Is moka rt for me ? And do you prefer 2c or 3c models ? Thanks ❤
Its made for darker roast in mind and make stronger coffee then a french press. Note that in moka cup means 50ml a mug is 250ml. So to fill a standard mug you need at least 6cup version. To make 2 decent mugs 9cup version. I was using french press with 15min brew time. From a 9cup moka its way faster, have the strength but more smooth taste. I measure the coffee as pouring in whole beans and grind that. It make a little mound that i press down as the fresh grind is more aerated. Grind coffee from a vacuum sealed pack may differ. After the brew if the coffee cake in the basket fall out when you turn in up side down. It means its not packed enough. Mine are firm similar as from expresso machine and you can picked them up. The finest setting on my cheaper grinder with flat metal "grindstones" make just the right blend of fine and course mix similar what she show in the video. In french press it cause quite a lot of fine particles to pass true but the moka is very clean as the coffee is packed and not sloshed around.
yeeaaaah cofffffeeeee
Where are you from ?
Great points and tips for novices like myself. Thank You.☕

Watch a couple other random pore over videos, you’ll see how incomplete and lacking information this video is.
Isn't too drawing down too quickly or too fast the same thing?
Didn't watch. I'm not making it wrong. I'm making it right.
Another great one|
Not bad at all!
Honestly my brikka makes 1000 times better espresso alike coffee. That aero press crema disappeared sooner than a drop of water in a desert.
It's awesome to hear that you love your brikka! Everyone has their favorite brewing method, and it sounds like yours really delivers that perfect cup!
You answered a question I was thinking about regarding using pre heated water and your explanation of the benefits ticked all my thought boxes. This has helped me on my mission to make an approximately perfect cup of coffee using no electrical assistance from bean to cup. Apart from the variable temp kettle.
Very nice! This channel should be a gold standart! abraço from Portugal!
I truly appreciate your kind words! It means a lot to know the channel resonates with you. Abraço!
whwre can I buy same grinder please as You are using on this vid ?
Google. Amazon.
🤓 ☕️ 💪🏾 this is fantastic! 💯
Awesome to hear! Thanks for watching! 🎉
Can't disagree with this. Been using Moka for a decade it makes great coffee, done right. Hot water and lower flame. The emphasis on water and beans is overdone, but they're selling beans.
Absolutely! The Moka pot really does bring out the best in coffee when used correctly. A decade of experience definitely speaks volumes!
Add a pinch of salt
Are you mocking me ?
Daek roast is an abomination
I'm sure it make an interesting video but regular tap water works just as well. I've been using my Moka Pot for years, no mineral or calcium build up. And I lust use regular ole store bought coffee. And it always tastes great. It's not rocket science.....
Same with me, I grind grocery store beans and make excellent coffee. You don't need everything to be fancy and expensive.
I bought my little 2 cup Mokka Pot from a Flea Market years ago. The black pot handle is missing, probably from over use over a stove top flame. Best investment ever.
How can I get a Volcanica T-Shirt like yours?
hey, do u have a vid like this about natural process? would love to watch that ! :)
Yes I do! Check it out here ua-cam.com/video/vJA6zBYf65M/v-deo.html
@ thanks!
Meh... no need to grind coffee. kimbo napoletano is the perfect coffee for moka pot.
Honestly all that faffing about is totally unnecessary. I’ve been using a mocha pot for over 30 years and I get a wonderful cup every time. Just use it as intended. It doesn’t come with any instructions as none are needed! It’s sposed to be simple and quick.
I need instructions, because I hate mocha pot coffee. I love home brewed coffee. I don't think mocha pot coffee is successful.
So all the households over the centuries made BAD cups of coffee because they did not have scales and bloody timers? I made coffee for 40 years at sea ( so you were not around even) and never had complaints of bad cup of jo ever. 🤣🤣😂😂👎👎
Coffee is oily so I wash my coffee pot after each use. Never used a moka pot because its aluminum, I use stainless steel.
Nothing wrong with aluminium, even the American Alzheimers association declared aluminium cooking utensils are of no risk to health. Having said that stainless steel is superior with lower pH water.
€300-400 for a bloody grinder ? I don't think so , not for a cup of jo . 🙄🙄👎👎👎👎 And i wonder i they can't count to 30 anymore that they all need a timer making a cup of coffee? 🤦♂🤦♂🤦♂🤦♂
We've linked to some low acid coffee options in the description above. You can look at the different PH on the website.
Coffee just taste shit admit it😂😂😂
I load my coffee up with a sheet of high-powered blotter acid until I can taste it, then tone it back a notch.
Is that paper for the v60?
Good information.
Great video! Thanks
Why not espresso grind?
You'll end up with an over extracted brew and it will be bitter
Before brewing, add a few mm depth boiling water into the coffee collector (most people add water to their brew anyway) - this prevents the bottom of the collector overheating and burning the first drops of coffee. This is even more important with smaller pots where the metal heats up more quickly.
Great tip, thanks!
thank you
You're welcome
Stir? What happens when you pour?
Is the ratio done by weight? Lets say 20grams of coffee to 300 grams of water? Or is it by volume say two tablespoons of coffee to 15 floz of water?
Yeah, the ratio is always done by weight, so grams of water (which is the same as ml's). So yeah, with what you've got that would be a 1:15 ratio. Once you've measured you could switch to something more easy to measure. To be honest, it doesn't have to be 100% perfect, as long as you're close, it should be delicious!
I am in the coffee business and do cupping (testing coffee quality). We measure it by grams per ml, the simplest way. In my french press, I use a heaping tablespoon of fine ground coffee per coffee mug of boiling hot filtered water. This comes to 10-12 grams of fine ground coffee per 250 ml (8.4 floz) of water. Easy. I have tried letting the boiling water cool beforehand, letting the coffee and water sit in the french press for different lengths of time, mixing it before pushing down the plunger. Did some blind cupping. The difference was negligible in my view. What is most important is that it is a fine grind, the coffee is fresh and high quality and the water is filtered. But there is no right way. Try a bigger tablespoon of coffee, or smaller one, more or less coffee. You are the expert.
How can anyone fail to use a Mocha pot correctly?
It's surprising, isn't it? Sometimes it's all about the little details that can make a big difference!
From Myanmar County
Great thanks
You are welcome
I agree with most things you suggest apart from the grinding size. I prefer a finer grind. To prevent grains/sediment reaching my cup and making it bitter, I place a paper filter from my AeroPress underneath the metal filter of the Moka Pot.
This! This is the biggest gamechanger of all if you want to get the best from your moka.
Awesome, thanks! Will try using the paper filter from an AeroPress.🙂
I appreciate your feedback! It's always interesting to learn how others customize their brewing techniques. Your AeroPress trick is a clever solution! My thoughts would be it would make it harder for the coffee to pull through and could lead to over extraction
@@volcanicacoffee Your thoughts are incorrect 🙂 The paper filter is already wet as you want it to stick to the metal moka pot filter, using this filter creates a much cleaner cup. And if the Hoffmeister does it (check out his series on the moka pot) then I'm doing it too!
Is it made of (toxic) aluminium?
