      Hey! Thanks so much for watching 🫶🏻 great questions! Lentils don’t have to soak as long as other beans but I do soak them overnight. It’s just easier for me. Soak em and forget em. The mixture lasts about 5 days!

    The irony of avoiding sugar, but getting white rice, which is metabolically basically the same thing … why is the list not held up on screen so we can actually see what’s on it…

      I appreciate your insight but I have to disagree! Eating rice is NOT equivalent to eating sugar. Rice will become glucose in the body, while sugar is a 50/50 mixture of glucose and fructose. Sure, rice has a higher glycemic index than sugar (that's because half of sugar - the fructose - doesn't contribute to the blood sugar level), but the glycemic index itself doesn't say much. Rice isn't usually eaten separately. If eaten in a meal with other food, the glycemic index of rice (and with other foods as well) decreases dramatically. Cooked rice is far more nutritious than sugar, and it is also much lower in carbohydrates and calories. Most importantly, in addition to carbs, rice also contains protein, dietary fiber, B vitamins, and minerals such as calcium, iron, potassium, and phosphorus.

    Honey, if you can afford it, get yourself an almond cow it’s a little expensive upfront, but they will save you money over the long run. It works great and oh so quick to make the milk.

    I tried a variation of this recipe, without the nutritional yeast, with 1/4 teaspoon of baking powder and a 1/2 cup of aquafaba. It turned out pretty well. The taste was 1000 times better than the smell of the uncooked ingredients, which had a gross, raw bean smell. It was pretty light and fluffy with the added aquafaba and did not stick to my nonstick griddle.

      Did you substitute any of the milk since you were adding additional liquids with the aquafaba? Or just added aquafaba additionally? I would like to try your recipe.

      @@edieshockpaw I did reduce the amount of milk because I made only enough mixture for 3 omelets. I found that the original recipe I got from another YT video had a tendency to result in an almost flat, doughy-like consistency. So, I added the aquafaba plus baking powder, to produce a lighter, fluffier, more egg-like consistency. My mixture uses: 1/2 cup of mung beans (rinsed, soaked, dried and ground to a powder) 3/4 cups of milk 3/4 cups of water 3/4 cups of aquafaba 1/2 tsp of Spike seasoning (replaces the salt) 1/2 tsp of turmeric 1/2 tsp black pepper 1/4 tsp of black salt (trying to reduce the sodium content) 1/2 tsp of paprika 1/2 tsp of tapioca starch 1/4 tsp of baking powder 1 tbsp of olive oil I would suggest adjusting all of the seasonings to your own personal taste. BTW, I'm still experiment, trying to find the "perfect" mixture.

      It’s a useful tool for people transitioning to veganism. It’s also great for holidays because a lot of the people we spend our time with won’t be fellow vegans so it’s a great way to introduce them to or have a conversation about eating vegan.

      @ They make containers for oil that let you spray OR pour it. Search online for “oil spray pour.” I see them for around $7. Cheers!

      Quick google AI search told me this: Compared to an egg, a mung bean contains a similar amount of protein but significantly more fiber and carbohydrates, while having less fat and cholesterol

    i've been using JUst egg ever since i could finally get a hold of it. yes, it is frustrating the way it sticks to a 'non-stick' pan even using sprays. what seems to work best is, since it's not an egg, don't cook it at high temps. get your pan up to temp, add your fake egg, turn the temp down, put a lid on it to steam top down. if you want to flip it, which i don't recommend, pour a little water around the edge of the pan and gently work towards the middle with your silicone or wooden spatula until you've released it. this mix definitely doesn't react like traditional proteins so let's think outside the box until we can get it right. i hope this helps = )

    If you like the flavor of egg, adding the black salt after cooking will enhance the flavor more. The sulphur compounds in the salt are very volatile and often are lost in the cooking process, so best added at the very end. Same with tofu scrambles or any other cooked vegan dish that you want to taste a little eggy.

    Just egg is very hard to get in my area. Im not sure why there is a shortage still, but it is always sold out. When i do find it, it costs $7 in nevada. I only use it for frittata. But i am looking forward to trying this duplicate recipe. Thank you!

    As an egg allergy sufferer, i have a question. Is yellow split mung beans the same as what in England we call yellow split peas? Your egg replacer recipe looks and sounds great.

      Split yellow peas are very fibrous. They take longer than green split peas to cook. They Split Mung beans will be without the skin, (dark greenish skin), and will be tiny little yellow ovals, with one flat side (the split side) when dry. These split mung beans take less time to cook than any dry split peas.

    sounds really good, definitely going to try it soon. one thing i'm going to add is some juice from "half sour" pickles or sauerkraut which has plant based lactic acid in it. seen a few other vegtubers use it in similar recipes; let you know how it goes!
