I really appreciate your delivery and tone when talking on these subjects. For a man with such experiences as yours, you're absent of condescension. I've been around a lot of great and talented chefs but there's always undertones of ego and superiority complex.
Thanks for the message chef. I appreciate it; to be honest, it's taken some practice, and life is humbling. At the end of the day, I learned what I did because I was around chefs willing to teach and be patient with me, I certainly learned a lot from chefs who had that tone, but I realized I didn't want to have that. Also, I think it comes from insecurity, I'm at a point where I have no shame admitting what I don't know or asking questions.

Thank you, Chef Ford. I've been a commis chef for the longest while, and I've been told by my sous chefs and CDPs that I possess the skillset of a demi. I've had the blessing of learning from a bunch of great chefs at a tonne of different places. However, I've never stayed longer than 6 months at any of the establishments I worked at when I was younger (17-24), due to my own arrogance and poor decision making (i.e., getting effed up at work). I'm 27 now, and my wife says I've come a long way from how I used to be. We have a beautiful, soon to be 5-year-old highly autistic child together, who's honestly just the coolest kid on the block! I decided this year is the last year I work for anyone other than myself and the community I serve. I'm currently waiting on operational permits for my brick & mortar (fried chicken restaurant) in South-East Asia. We're nearing towards our soft launch. Any words of advice, Chef?
