    Wonderful cook of cheeks. I know a lot of people steer away from them, but they're totally worth the effort. Great display of technique.     After removing the fat from the jelly, I would have poured off most of the stock but stopped before the gritty/bitty residue at the bottom of the saucepan.

    This is no good and dangerous for your health. You have to wait until the charcoal is burned complitaly. There should be no or really less flames to avoid soot. Good luck!!
