Brings back memories. With a hiking friend I took three holidays each in September, an excellent time to go, three weeks each time, so we covered a lot and made several day-long hikes, including the Tre Cime circuit (get up early to beat the queues at the carpark). We did all of the Sud Tirol, not only the Dolomites, so Munich is another excellent airport to use for getting there. It's a magical place, well worth making it a major holiday destination. On the third trip we took my sister and her husband from New Zealand and they adored it.

I know that Amsterdam nowadays is expensive, but it's not that just one club sandwich costed you € 78,-. Like other items, can you please be more specific with how many people you were there, etc.
