This recipe makes 22-25 alcapurrias depending on the size. You can freeze the alcapurrias if you want as well. We also put them in the air fryer and they came out really good.
Meat
1 lb of ground beef
15 capers
10 olives
3 tablesp tomato sauce
3 tablesp oil
2 tablesp annatto seeds (put annatto seeds in the oil in a pan, once the seeds start to bubble, turn the heat off and let it rest a little, then drain the annatto seeds)
½ tea of salt
½ teasp of pepper
½ teasp of oregano
3 tablesp sofrito (garlic, onion, red and green pepper, cilantro, culantro)
Masa
4 lbs of green bananas (15 bananas)
1 green plantain
1 yautia (optional)
2 tablesp oil with annatto seeds
½ tablesp salt
1 tablesp of flour
00:22 - Preparing the meat
03:41 - "I like my fat" & "I like fried food"
04:46 - Cutting the bananas & making the masa
10:52 - Forming the Alcapurrias
12:17 - Frying the Alcapurrias

For those of you struggling with accidentally burning the caramel I recommend a microwave safe measuring cup. Add 3/4 cups of sugar and 4 tablespoons of water mix then microwave for 4 min to 4 min 45 sec or until you get that nice amber color
Thank you so much for this! I spent over 45 min trying to make the caramel for it to not turn out well. I saw your comment and it works perfectly, I just had to increase the time to about 7 min to get the right color. Thank you again I was ready to throw in the towel 😂
