Clean Monday meals with Janae. Meal prep made simple. Meal prepping food that is Gluten Free and dairy free. For those who want to eat clean, simple and suffer from autoimmune diseases like Celiac Disease or food allergies.
Part One: Warning about Splash Summit Waterpark in Provo Utah.
On July 5th, 2024, Splash Summit, in my opinion, discriminated against my 15-year-old daughter, who has been diagnosed with type one Diabetes and Celiac Disease, by not allowing her entry with a small cooler full of low snacks (food she needs in the event her blood sugar is low and dropping.)
I have posted my experience online, and I'm pushing the park to change their current policy (which is more than five years old 🤯) because it's not in compliance with ADA guidelines and is extremely dangerous for diabetics like my daughter.

Can I just start off by saying Thank you so much for sharing this content .. ( as the tear roll down my face in agony and pain) I to suffer with gluten intolerance, meat Intolerance and dairy intolerance as well; therefore I can emotional empathize with you😢. In fact I encountered an incident similar to you on today and as I sit here in severe abdominal bloat and trapped gas that’s moved up to my left shoulder, I’m super grateful for your transparency. Thank you also to the camera man and your mom for being so supportive and understanding. You are so loved and that truly helps. My husband is now understanding and is helping along this journey as well. I’m just learning that every time I consume something it is critically important to read the label of ingredients in entirety and double. He’s sort of my little accountability partner I really sincerely hope you feel better as we conquer this journey gluten sensitivity one meal at a time. OMG, my heart is breaking for you. I am so sorry you're dealing with this right now. So so sucky. I hope you can recover quickly. I have found that for me once I am glutened, the Hilma pills do help me the most. I use and recommend Rehydrate and recover, gas and bloat and upset stomach. Hope you start to feel better soon. xoxo

Egg sliders Recipe: 2 Cooked bacon (sliced) 4 Cheese (sliced into cracker size cheese) 4 Hardboiled eggs Salt and pepper (to taste) 1. Cook eggs in Instant Pot on manual setting, low pressure for 4 minutes with an instant release. 2. When eggs are done, allow them to sit in an ice cold water bath for 5 minutes. Then peel them. 3. Prep the rest of the ingredients by cooking and cutting your bacon into 8 pieces (2 piece per egg), arrange 4 slices of cheddar cheese (1 per egg) and slice 4 boiled eggs in half. 4. Sandwich 2 pieces of chopped bacon and 1 piece of cheese between 2 egg halves and secure them together with a toothpick. 5. Sprinkle with salt and pepper or your favorite seasoning. Simple Chicken Burrito Bowl Recipe! Ingredients Chicken: 1 1/2 lbs boneless skinless chicken thighs 1 Tbsp coconut oil or avocado oil 3/4 tsp sea salt 1 tsp onion powder 1 tsp garlic powder 1 tsp cumin 1 1/2 tsp chili powder Juice of 2 limes Cauliflower Rice: 1 lb cauliflower rice. I purchased this pre-"diced” or use regular jasmine rice 1 Tbsp coconut oil, ghee, or avocado oil 3/4 tsp sea salt 1-2 Tbsp fresh lime juice (optional) 1 jalapeño pepper minced (optional) 1 TBS Clean Monday Meals Ramen Seasoning Peppers and Onions: 1 large onion sliced thin 1 large red bell pepper sliced thin 1 Tbsp coconut oil or other cooking fat sea salt to taste Optional Toppings: Salsa and guacamole Instructions For the Rice: Heat a large skillet over medium heat and add oil or ghee. Add the riced cauliflower and stir to coat. Cover skillet and cook for about 2-3 minutes to steam. Uncover and stir, then add the jalapeño, salt, seasonings, and lime juice. Cook and stir another minute or two uncovered until you have desired texture, then remove from heat and set aside. For Chicken, Peppers & Onions: Cut chicken thighs into bites size pieces. Season all over with all seasonings (not the lime) and heat a large skillet over medium-high heat (you can move the rice to a bowl and use the same one) and add 1 Tbsp cooking fat. Add chicken and brown all over, stirring as needed. Stir and cook over medium/medium-high heat for 7 mins or until cooked. Lower heat a bit and add the lime juice, stir, and continue to cook another 2-3 minutes, then remove from heat and place in a bowl. Keep the heat on medium and add another Tbsp fat to the skillet. Add peppers and onions and stir to coat with fat. Sprinkle with a bit of sea salt to taste, and continue to cook, stirring occasionally, for about 5 minutes or until softened and browning, then remove from heat. Assemble bowls: Layer the rice, chicken, peppers, and onions in bowls, then top with guac and any other desired toppings. Serve right away and enjoy!

RECIPE! Include your favorite yogurt, some fruit, and this incredible gluten-free granola! Recipe below 👇 Homemade Granola Recipe Ingredients: 4 cups old fashion gluten-free oats 2 tsp cinnamon 1/3 cup brown sugar 1/2 cup pure maple syrup 1/3 cup coconut oil (melted) 1 1/2 tsp vanilla Instructions: Combine all ingredients. Pour onto a lined baking sheet. Bake at 325 for 20-25 min stirring halfway in between. Let it cool and break apart. Store in an airtight container for up to two weeks. I've found that one of the easiest ways to clean up my diet is to snack healthier. But it can be hard to resist unhealthy snacks if they're the only ones available.
