Indonesian Stir-Fried Noodles (Mie Goreng)
Ingredients:
- 4 Dry Egg Noodle
- 3 Eggs
- 1/2 Onion, thinly sliced
- 8 cloves of garlic, minced
- 1/4 Cabbage, sliced
- 1 or 2 Carrots, slice into the shape of matches
- 3 Green Onions, sliced
- Fried Shallots (bawang goreng), or Crispy Onions to garnish
For seasoning:
- 3 T Canola oil
- 1 T Light soy sauce (not low salt)
- 1 t White pepper
- 1 T Garlic powder
- 1 T Sweet soy sauce (kecap manis)
For stir-fry
- 3 T Canola oil
- 1 T Shaohsing (Shaoxing) Cooking rice wine
- 1/2 t White pepper
- 1 t Light soy sauce (not low salt)
- 1 T Sweet soy sauce (kecap manis)
- 3 T Water

Can we use honey instead of sugar?
I’ve never tried, but I believe you can substitute honey for sugar. You may wanna use less though since honey is sweeter and has strong taste than sugar.

I never knew this is the way to make Cendol, I have tried it as a boy in the 90's when we went to visit old Indonesia people of our Church and the nice old lady made it for us. The old man was drinking Coffee toebroek, Indonesian coffee that many people like to drink, it is for the patience people haha. This only think that is a but of a problem I see when making Cendol is the in-consistency of size en lenght when cooling down Cendol. Since the Cendol past has a very high viscosity it is therefor hard to use gravity to time drops in the water, maybe if you introduce a new force the Cendol can fall through hols in a basket like device, just like cabage when you cut it and wash it and then want the water out of it to preserve it for a few days in the fridge, centrifugal force can be a good thing, the only next problem is only the lenght....it should be much easier to cut long Cendol strings then let's say random size and forms of Cendol right?! :)

Texture-wise, it should be fine. But, if you just like it less sweet, I would reduce the sugar to 3/4C first to see if it fits your taste. :)

Looks very tasty but I need to find the sweet soy sauce. The authentic Indonesian sweet sauce seems to be best.
They sell small or big bottles of ABC sweet soy sauce (kecap manis) on Amazon. That sauce is also good on a fried egg!!

Hi beatrix stien. Can u tell me the temperature in Celsius n how many minutes did u preheat the oven n the heat u use up n bottom. Do advise
350°F is about 175°C. I use both upper and lower heating elements, and the preheat time is different for every oven. My oven beeps when it reaches the temperature, but you can use thermometer to make sure that your oven has reached the desired temperature.

how did it come eggplants didn't change color? is it because of coating? I heard that you need to have high heat wok in order to preserve it's original skin color.
The soaking in salt water until cooking time, do not cook them using aluminum or unseasoned cast iron, and don’t cook it too long.
