Don’t forget to LIKE 👍🏼 and SUBSCRIBE 🫶🏼 Recipe 👇🏼 Pumpkin Risotto * 1 shallot, finely diced * 3-4 cloves garlic, grated * 1 qt stock (vegetable or chicken) * 1 cup pumpkin puree * 1 small bunch fresh thyme sprigs, tied in kitchen twine * 1/2 - 1 tsp salt * freshly cracked black pepper * 1 cup arborio rice * ½ cup dry white wine (Pinot Grigio or Sauvignon Blanc) * 3 tbsp butter (can add more if needed) * ¾ cup freshly grated parmesan cheese Instructions: 1. In a Dutch oven or a deep sauté pan add 1 TBS butter and diced shallot over medium heat. Sauté for 2-3 minutes until tender, add grated garlic and sauté until fragrant. 2. Meanwhile, heat the stock in a small saucepan over medium-low heat until just barely simmering. Whisk in the pumpkin puree. Keep the liquid warm over low heat. 3. Add the sprigs of thyme, a pinch of salt, and a few cracks of freshly cracked black pepper to the shallot, garlic, and purée mixture. Stir in the arborio rice. Allow to toast for a minute or so. 4. Add the white wine. Use a wooden spoon to stir until the rice has absorbed the liquid. Start to ladle the heated stock into the pot, one ladle (or about a ½ cup measurement) at a time, stirring after each addition until the liquid has been absorbed. Continue until you’ve added all of the liquid. This process should take about 25-30 minutes or so. 5. Once rice is al dente, remove from heat and remove the sprigs of thyme. Stir in the butter, and ½ cup of the parmesan cheese. Once the butter and cheese have melted, serve the risotto immediately. Garnish with protein of choice and the remaining ¼ cup of parmesan, and more black pepper. 6. Enjoy!

in your video you say baking powder. in the ingredients list you have baking soda?
My apologies, the recipe card is correct. If you don’t have baking soda you can substitute for baking powder, however you will need 3X as much (in this case 3tsp).

RECIPE👇🏼 Pumpkin Spice Energy Bites Ingredients: 1 cup pumpkin purée 2 cup rolled oats 1/2 cup nut butter of choice 1/4- 1/2 cup maple syrup or honey (dependent on sweetness desired) 1 tsp pumpkin spice 1 tsp cinnamon 1/2 tsp vanilla extract Pinch of salt 1/4 cup ground flaxseed (optional for added fiber) 2 tbsp chia seeds 1/2 cup unsweetened shredded coconut (optional) 1/2 cup chopped pecans or nut of choice (optional) 1/2-1 cup chocolate chips (optional, depending on sweetness desired) Instructions: Mix Wet Ingredients: In a large bowl, mix together the pumpkin purée, nut butter, maple syrup or honey, and vanilla extract until smooth. Add Dry Ingredients: Add in the rolled oats, pumpkin spice mix, cinnamon, ground flaxseed, chia seeds, shredded coconut, and a pinch of salt. Stir well to combine. Fold in Extras: If using, fold in the chocolate chips and chopped nuts. Chill the Dough: Place the mixture in the refrigerator for 30-40 minutes to firm up, making it easier to roll into balls. Form Energy Balls: Once chilled, roll the mixture into bite-sized balls, about 1 tablespoon each. Store: Keep the energy balls in an airtight container in the fridge for up to 1 week, or freeze them for up to 1 month.

Place coated pumpkin seeds onto a baking sheet lined with parchment paper and roast in the oven at 350° for 20-30 minutes or until evenly browned and crunchy, stirring seeds halfway through. Once done, let cool for 10 minutes then Enjoy! Brown Butter & Honey Pumpkin Seeds: 2 cups pumpkin seeds 2 Tbs butter 3 tsp honey 1/4 tsp salt 1/2 tsp cinnamon Melt butter in a skillet over medium heat, stirring frequently until you have achieved browned butter. The aroma will start to smell like toffee nut and the butter will become a beautiful Amber in color. Once you have achieved brown butter add in your honey, cinnamon, salt, and pumpkin seeds. mix until well combined, then add to a baking sheet lined with parchment paper and bake in the oven at 350° For 20 to 30 minutes. Stir pumpkin seeds halfway through, once the seeds are done roasting let them cool for 10 minutes and then enjoy!

Viral Date Bark Recipe • 18-20 pitted dates, smashed • 1/2 cup chopped nuts of choice (I used pecans and toasted them with 2 tbs butter & a tsp of cinnamon) • 1/2 cup chocolate chips + 1 Tbs coconut oil melted • 1/2 cup peanut butter melted • flakey sea salt to finish Layer your dates in a rectangle on a baking sheet lined with parchment paper, evenly spread a layer of melted peanut butter, followed by a layer of melted chocolate. Then evenly sprinkle toasted nuts, followed by another drizzle of chocolate over the top and flakey sea salt to finish. Freeze for 30 minutes or until set. Break apart into pieces and enjoy! I store mine in the freezer and just grab a piece whenever I need a sweet treat!
