Know your étiquette! Adelaide Hills
Know your étiquette: Adelaide Hills. The excellent images by John Kruger do a lot of the talking here, as the splendour of Adelaide Hills is kind of wrapped up in the sunshine and lofty coolness of this region. Its proximity to Adelaide makes it an easy reach for tourists, who’ll find a lot to delight them among the 50-odd cellar doors nestled among these valleys.
Home to less than four-fifths of the vineyard area of Clare Valley and about one-third of the Barossa Valley, Adelaide Hills punches above its weight. Articulate regional champions such as #Petaluma founder Brian Croser, Prue Henschke and Michael Hill Smith of Shaw + Smith have contributed to its gravitas, but, really, it’s the energetic, nuanced authority of a range of wines - Sauvignon Blanc, Chardonnay and Shiraz in particular - that elicits admiration and wins accolades. It hasn’t hurt that some of McLaren Vale’s leading lights have turned to these elevated vineyards to compose crystalline whites to complement their Mediterranean-climate reds.
This AUD $38 (RRP) Chardonnay is a prime example of the flavoursome purity and tension Adelaide Hills can provide. The lion’s share comes from Murdoch Hill's estate vineyards in Oakbank and Lenswood, supplemented by fruit from Lobethal and the Piccadilly Valley.

Know your étiquette! Corpinnat

Well, this is a bit next-level nerdy. Not even an appellation, and something I wasn’t even aware of until relatively recently, even though it’s been going since 2017. Mind you, just a handful of growers and tiny production. Why care? Well, it’s always notable when you get a breakaway group of super-ambitious, quality-obsessed producers working hard to transcend the perceived limits of their app...

We’re off to Spain for some traditional-method bubbles. A lot of people ask me about various sparkling wine options and which make a sound alternative to Champagne. In general, this is quite a poorly understood category, maybe because so much fizz is poured unthinkingly down throats when meets, greets and toasts are on the menu. Also, Champagne’s luxury marketing tends to give a sense that you’...
Know your étiquette! Geelong

The Geelong region’s life as a #wine-growing area began in the mid-1800s, but it underwent a 100-year hiatus before rebirth in the mid-‘60s. Bannockburn Vineyards, planted by the Hooper family in 1974, started something truly exceptional with uncanny foresight, superb vineyards and the revelatory talent of Gary Farr, who went to establish By Farr. These two terroir powerhouses on each other’s d...
Grapes into wine: Quealy's Turbul skin-contact range
Переглядів 107День тому
This is an extremely interesting style of wine, and this range has turned out beautifully. As Tom McCarthy is at pains to point out, these wines are not about skins but about expressing the whole grape-the specifics of the variety and the vineyard-and the fullness of flavour, texture and personality that emerges when a meaningful period of time is part of the equation. Tom's parents Kevin McCar...
Sense of Place: The Parra gallega of Rías Baixas

The rain in Spain falls mostly on... Galicia. And that’s part of the reason why grapegrowers employ the parra gallega - the local riff on pergola-trained vines that makes use of the region’s abundant granite - in their lush Albariño vineyards. I recently caught up with my friend Diego Ríos, the Chile-born winemaker at the helm at Bodegas Granbazán, at the iconic Finca Tremoedo just outside Camb...
Know your étiquette! Beechworth

Named after a town in northeast Victoria, this Geographical Indication (GI) is home to just 130-odd hectares of vineyards and has an outsize reputation for the quality of its wines. Beechworth struck gold - the coveted metal kind - in 1852 and discoveries ensued in Yackandandah, Nine Mile Creek, Stanley and Wooragee. That led to prosperity hand-in-hand with flourishing 19th-century vineyards. I...

A Gondomar morning with Jorge Marcote: Alberto Cábaco Mariño grew up in Gondomar, where his grandfather owned a wine warehouse. After making his fortune in Galicia's fishing industry, Alberto moved back there and in 2017 embarked on an ambitious journey to establish a wine estate there. In 2018, he enlisted the help of Baiona-born ex-sommelier Jorge Marcote to help him build the dream, called B...
Sense of Place: Val do Salnés, Rías Baixas
Переглядів 41Місяць тому
Rías Baixas has done an incredibly good job of portraying its lush vineyards and granite soils as ground zero for singular, refreshing Spanish white wines of place. It's been helped a lot in this regard by the fact that its pin-up grape, Albariño, is a charmingly vivacious variety with an ability to transmit these soils in pure wines of salty minerality and electric acidity. They are wines that...
Wine Show & Tell: Behind the scenes at AAVWS

"More than just a wine show”, goes the tagline of the Australian Alternative Varieties Wine Show. The show-AAVWS to its friends (and it has many)-is happy to have the claim interrogated. After all, it’s had a quiet confidence all along that its supposedly niche subject matter deserved an audience way beyond the fringe. The story of the show's genesis and evolution is a fascinating one, superbly...
Grapes into wine: Making cooler-climate Cabernets

Cabernet Sauvignon is the world's most-planted wine grape. Mainstream popularity is not always a marker of quality, but in this case we are talking about a seriously strong leader: distinctive, intense, delicious flavour; pronounced aroma; deep colour; and architecture from tannin and acidity. Reigning supreme on the left bank of Bordeaux in southwest France, it heads up a crack team of grapes ...
Variety Show extra: Steve Flamsteed on Gamay
Переглядів 1163 місяці тому
It is always a pleasure to hear Steve Flamsteed talk about wine. Followers of Vininspo! have, I’m sure, taken great pleasure in tasting the fruits of his cool, calm labour. Given Steve’s fame for Pinot Noir and Chardonnay, especially while at the Giant Steps helm, you might be less aware of his fondness for Gamay - whose wines, he says, should be “delicious and full of love and joy”. Back in 19...
Know your étiquette! Cru Beaujolais

Know your étiquette: Cru Beaujolais. I know what you’re thinking: the étiquette (French for label) doesn’t even say Beaujolais. True that; a bit of a quirk, but in fact these 10 pinnacles of Beaujolais terroir are their own appellations contrôlées. Gamay doesn’t lose its sense of fun here, but we do get markedly more serious in terms of the impact of terroir on style and structure within this z...
Know your étiquette! Beaujolais

Know your étiquette: Beaujolais. After the recent look at the Gamay grape through the lens of a Mornington Peninsula-grown wine by Eldridge, we travel to the grape’s homeland in southern Burgundy. You might recall it was formally - if not decisively - banished from Burgundy proper in the late 14th century. It's been planted in the Beaujolais region since the 17th century, and it's estimated tha...
Variety Show: Gamay

Variety show: Gamay. The black grape of #Beaujolais has been knocked a bit over the centuries. It was famously dissed and banished from the Duchy of Burgundy back in the late 14th century. Six hundred years later, it paid the price for nouveaumania, which made Gamay synonymous with simple, fruity, frivolous wines that tasted how they were made (fast, easy...). How things have changed! Australia...

Thanks for sharing this valuable video. A question: You dont use a chiller during fermentation. This does not harm to aromas which they may evaporate at high temperatures of fermentation?

Was yeast added at all? It wasn't shown in video. Also was sugar added to get that ending alcohol content? Thanks!

    • @vininspowine
      @vininspowine 10 місяців тому

No, in this case no yeast was added as the must was allowed to ferment naturally. This is also called wild or spontaneous fermentation - the same as when we say "fermented with native/indigenous yeasts". The yeasts naturally present in the winery/vineyard get to work on their own!

What are they using to top off the barrel? Is it extra pinot noir they have stored somewhere? Or is it just grape juice

Nailed it again Ed. I would like to know more about sweet wines and the variation in flavour profiles from Germany, Austria, Italy through to Hungary and on to our own Rutherglen. Fascinating styles. I have a 99 Yquem (750ml) rolling around should I leave it, sell it or drink it with you? Keep up the informative work it is excellent.
