How to cook four cheese risotto - this is an authentic recipe from Italy, it works with any preferred cheese types, I included 2 creamy cheese tyoes (among them Gorgonzola), provolone piccante for some spicyness and Parmigiano Reggiano DOP.
This creamy risotto (no cream is used) is a heart warming meal, easy to prepare and perfect for the colder season. Make sure to use proper quality ingredients made in Italy.
