Easy Homemade Kimchi for the People
Kimchi is a lot easier to make at home than you might think! It adds some heat and major savoury flavour to whatever you’re eating-an easy way to add more greens and healthy fermented ones to your diet.

Easy Homemade Kimchi Recipe
Ingredients:
- Napa Cabbage: 2 medium sizes (about 8 pounds total)
- Coarse Sea Salt: 1 cup (use less if using finer salt)
- Water: 6 cups
- Korean Radish (Mu): 1 small (about 1.5 pounds), peeled and cut into matchsticks
- Scallions: 5-7, roughly chopped (optional)
For the Seasoning:
- Gochugaru (Korean Red Chili Pepper Flakes): 1 cup
- Myulchi Aekjeot (Fish Sauce): 4 tablespoons (optional)
- Garlic: 4 cloves, minced
- Ginger: 2 teaspoons, finely grated
- Sugar: 1 teaspoon (optional)
Instructions:
1. Prepare the Cabbage:
- Cut each cabbage in half lengthwise, then cut into quarters. Submerge the cabbage pieces in water, sprinkle the 1 cup of coarse sea salt between the leaves. Allow to sit for about 2 hours, turning every 30 minutes to ensure even salting.
2. Rinse and Drain:
- After 2 hours, thoroughly rinse the cabbage under cold water to remove excess salt. Drain well and set aside.
3. Prepare the Radish:
- While the cabbage is salting, prepare the radish by cutting it into matchstick-sized pieces. Set aside.
4. Make the Seasoning Paste:
- In a large bowl, combine the gochugaru, fish sauce (if using), minced garlic, grated ginger, and sugar (if using). Mix well to form a paste.
5. Combine Ingredients:
- To the seasoning paste, add the radish and scallions (if using), and mix well to ensure the vegetables are fully coated with the paste.
6. Mix with Cabbage:
- Add the drained cabbage to the seasoning mixture. Using gloves to protect your hands from the chili, gently work the paste into the vegetables, making sure each piece of cabbage is well coated.
7. Fermentation:
- Pack the kimchi into a clean, airtight container, pressing down to eliminate air pockets. Leave about an inch of space at the top. Seal the container and let it sit at room temperature for 1 to 5 days for fermentation. Check daily, pressing down on the vegetables to submerge them in their liquid, which will prevent unwanted mold.
8. Storage:
- After 1 to 5 days, when the kimchi tastes fermented to your liking, store it in the refrigerator. It will continue to ferment but at a slower pace. Enjoy your homemade kimchi with your meals!
Note: Taste as you go and feel free to adjust the seasoning to match your preference. Remember, making kimchi at home is about finding the right balance that suits your taste!

    No, not necessarily so you do not need to wash them with water. You just wipe them with a damp paper towel washing them with water makes them way too soggy. lol

    Portabellas make a great burger replacement... grilled like a burger and similar cooking time. But real cheese gives it a lot of fat... and you can make your own cheesy sauce from nutritional yeast, raw cashews, lemon juice, water and a starch to thicken it.

    I cook for my home (7yo daughter, wife, and i), I have no top teeth, am lactose intolerant, have to control my cholesterol, and have a fiber deficiency. My diet is well balanced and my recipes are a large variety of both foreign and local dishes. I eat green but I also enjoy meat.     It wasn't moist! I could never peel ginger with a spoon. Hopefully "moist" is the secret. I just came home with 2-1/2 pounds of ginger for ginger tea.

    dude from some experience and knowledge: don't wash mushrooms and the gills are clean they open up in 2 days, it's clean inside, damp towel or paper towel is best, just swipe em clean on outside. after a water bathing they inhibit too much water so the marinading process does not take place.

    You really shouldn't wash mushrooms, moisture is not good. Use a brush of a damp rag to clean the top, scoop the gills on the underside out with a spoon after removing the stem.

    FYI - not supposed to "wash" mushrooms, just dust off with dry paper towel because they are porous and will retain water - but I appreciate your yummy recipe!!! Thank you!!!!!! 😊
