Hi, I'm Chef Angelo Montes,
I was born in Licata, Sicily in Italy and raised in Biella Piemonte in Italy.
I moved to United State of America in 1999.
I have been Executive Chef for 10 years in Italian restaurants at the same time with great success.
After that experience in 2012 I opened in my restaurant which was called Sole Mio Ristorante in Woodbury Minnesota, in 2020 I closed it for the covid 19 virus. Sole Mio Ristorante has been very successful, with many awards from the industry.
I became Chef of the Year in 2012 by the American Culinary federation, 2017 number 34 Cutting Edge award National and many more awards.
I make videos because I want to give everyone the chance to cook good food.
With my experience of having lived in Italy for 35 years and being a food fanatic I have tasted thousands of original Italian recipes.
I hope you will find my videos good enough to try cooking my recipes.

Chef made a roux. Was it added to the sauce?
had to check for pink in his chicken before he took a bite😂. no color on the chicken, breading looked doughy, mushrooms not cooked (also not portobellas) like he said they were. I dont understand doing this when its clear you are not able to pull this off at a high level.
no wet hand dry hand on the breading huh? saying he wants to teach but doesnt know that all fingers full of breading after the chicken is bad technique. breaded chicken into cold pan; overstuffing the pan. maybe if he had a hot pan and used proper technique his chickens breading wouldnt be sliding off as he grabs it with the tongs. heard the ringling bros are back in business.

I’m glad to see the chef using SWEET Marsala wine! In every other video on UA-cam they say, “Make sure you use DRY Marsala wine.” I’ve had this dish both ways and I much prefer it with sweet Marsala. I love the sweet/savory combination.
I have a question. First, he made the rue. Then there was a cut and the rue disappeared from the pan (with no explanation). Then, in the clean pan, he combined and cooked the rest of the ingredients (tomatoes, sherry, cream, etc.) but I didn’t see when or if he put the rue back in.
Did he even need the rue??
I watched twice thinking I missed it going in? I’m about to make this, not sure on the rue. What happened to it vanishing?
I ended up making it without the rue and it turned out fine.

Not missing anything here, time stamp 2:39 Cross Contamination! both hands in sausage, then proceeds to touch wooden spoon with raw hand, puts spoon back onto cutting board then cuts rosemary then touches everything else on counter, If your going to teach then teach people better technique and sanitation standards. Before he replies there was editing... there was none during the part of the sausage and cutting of rosemary.

Chef Angelo, thank you so much for this recipe. It was one of Eric’s favorite at your restaurant. I did it exactly and it tasted exactly like at the restaurant. We use squash raviolis from Trader Joes. Delicious!
What kind of pasta should we search for?
I used Trader Joe’s Butternut Squash ravioli. Try it, they are delicious.
