Recipe Ingredients:
Each recipe will typically make about 4-5 servings
For the Corn Husks
24 dried corn husks
Warm water
For the Jackfruit
3 (20-oz) cans green jackfruit, drained, rinsed and squeezed dry, coarsely chopped
3⁄4 cup cooking oil, plus more for cooking as needed
2 tbsp ground cumin
1⁄2 tsp crushed red pepper flakes Salt and pepper, to taste
For the Chile Rojo
4 dried guajillo chiles, destemmed and deseeded
4 dried ancho or pasilla chiles, destemmed and deseeded
3 cups vegetable broth
Salt and pepper, to taste
For the Masa
3 cups masa harina
2 cups hot water
1 cup refined coconut oil (with no scent or coconut flavor)
4 tbsp softened vegan butter
2 tsp baking powder
1 cup vegetable broth
Salt, to taste
Kitchenware:
Cutting board
Knife
Bowls
Medium skillet
Blender

      You likely do lose some nutrition, but can save the liquid to make an agua fresca and gain some of that nutritional value back.

    What is neutral cooking oil? I use avocado oil the most. Does that count?

    Your voice is soothing, so this is what i'm wondering does toasting of the corn act like a replacement for Nixtamalization? Also that's what i was wondering if the corn meal can be toasted since usually it's toasted before the grind but this help clear things up

    Thank you for rescuing our gastronomy, I used to have pinole when growing up in Leon, Guanajuato interesting we rarely had processed food primarily because back in the early 80's it was expensive. So we ate what humble people ate instead of soda we had agua frescas (tamarindo, sandia, agua de chia, pepino etc.), instead of bread we had corn tortillas, instead of candies we had sugar cane and fruits (mamey, sapote, tuna, pitahaya etc.) nopales, quelites, homemade chocolate from cacao beans, homemade crema agria from raw milk. Interesting with the Kombucha craze taking over we had the Native American version called tepache or colonche made from fermenting pineapple or prickly pear fruit. Please make a video about making these drinks

    Thanks for sharing. I'm from the South and make a lot of corn bread so I usually have corn meal around the house. One day I was out of oats for breakfast and used corn meal instead with cream, sugar, cinnamon and raisins. It's pretty good but I never tried it toasted. I think I'll give it a try in the morning :)
