    My husband gave me a Zojirushi bread machine in Dec 2017. I heard about it from a family I knew. I’ve never milled my own flour but I bet that makes amazing bread. I need to start using my machine again!

      I love my machine. It's the only way I can get fresh bread made. Yes, freshly milled is so delicious and nutritious. Even if you are making bread with flour it is better than store bought bread with all the additives.

    New here. I’m in East Texas & I’ve never heard of a North Georgia Candy Roaster. Is it in the squash family? I want to look for it at the store.

      It is a native Cherokee Indian seed that grows a large winter squash similar in flavor to pumpkin and a sweet potato. They are mainly found in North Georgia, Eastern Tennessee, and western North Carolina. I haven't seen one in local grocery stores. You might find one at a farmers market. Happy Thanksgiving.

    Your kitchen is so cute! I too have limited open shelves because of the dust. I really like them, but I do have to keep up with the dusting. That is why I like a mix of traditional and open shelving. This video motivates me to have a good cleaning day! :)

    Wow i cant believe what a nice rise you got and using spelt and Kamut no less! ! Bravo I started milling/baking a year ago because of Sue Becker‘s videos and amazing info. I also have both her books and I used. both recipes I never seem to get a good rise. The first time it was dense brick n sunk in middle. I’ve learned to lower the second rise by a few minute increments and it’s gotten better Tnx for showing your settings I never get a full rise like yours I’m in South Florida. It was 75% humidity the other day and today it’s 42% (I use same ingredients but will try spelt n Kamut instead of hard wheat)/Kamut i’ll have to keep trying I’m finally getting a decent loaf rise most the time I use the oven but I like convenience of just quickly throwing all the ingredients in and letting it do its thing. Thanks for your video encourages me to not give up on trying the bread machine till I get it right. BTW you do not need to be concerned about getting paddles facing a certain direction as long as you put them in the right way, which they can’t go any other way cause they won’t fit it doesn’t matter the direction paddles are facing. I heard someone who called Zorjirushi found out from them that video where the man mentioned that it’s incorrect.

      My MIL only grows in her Green Stalks. She hasn't done melons but has grown tomatoes, squash, and beans. I think you could try a melon or even a small pumpkin on the lowest level. I think I will try next year. Thanks for the idea.

    Can you tell me where I can find the bread machine recipe using sourdough and freshly milled wheat? I looked on Sue Becker's website, but could not find it. I currently use a machine with yeast and freshly milled, but wanted to try sourdough. Thank you for your help!!!

      I still haven't tried sourdough in my Zojirushi, but usually you would switch 1 cup of active sourdough for 1 cup of flour. You might need to use the memory settings to include a third rise for the day of baking (again, I have tested this). Or you could just make the dough on the dough setting. Put it overnight in the fridge. Then bake the next day. This is how I always make my sourdough. The overnight gives it more of a soured flavor and a better ride. Sue Becker gave me a handout years ago on sourdough. I'm not sure if that is in her books. I believe it was a handout after a sourdough class they had at the store.

    Please explain why you can’t use fresh elderberries to make the tincture please.

      I followed my herbalists books recipes and recommendations (I have a few different ones) they all say the tincture needs to be dried berries. You can use fresh to make syrup because you are cooking it from my understanding. The flowers are the only part that can be eaten fresh due to the toxin substance in elderberries, the leaves, and roots. I hope this helps.     Just what I was looking for. I’m tired of wasting collards and feeding them to my neighbors chickens. This year they will be canned for future use. I love to use smoker turkey necks or smoked turkey wings. My brother in law can’t do pork. Makes great collards. I also have a Nesco canner and feel confident in using it.

    That lemon juice is my favorite! I have seen those individual chicken bite things on a few videos and my Costco doesn't have them and I want to try them! My daughter would love those for her lunches.
