Pepper Pot 🇬🇾 Pancakes!! @ChefDwightSmith

These were as good as they look!! After our pepper pot video yesterday we had a ton of people asking us what we did with all that delicious braised meat. Well… here’s your answer. Pepper Pot Pancakes, an absolute #gamechanger
Once the meat was cooked we let it sit overnight to allow the meat to rehydrate and becoming even more juicy and tender. We then shredded the meat off the bone and and poured that beautiful sauce back on top and allowed it to cook down again slightly to increase the flavour. We then made a perfect stack of buttermilk pancakes on an outdoor fire pit giving the pancakes a subtle smokiness that really complimented the meat.
This was a labour of love and a two day process but the results were got is the reason why you absolutely need to try this for yourself!!!
Recipe,
Buttermilk Pancakes
Ingredients:
2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 pinch of salt
Wet;
2 cups buttermilk
1 stick melted butter unsalted
2 eggs
1 teaspoon vanilla extract (optional)
1 orange zested (optional)
Method;
Add your wet ingredients to a bowl and whisk together. Then add your dry ingredients to the wet and slowly whisk them until they are fully combined and no large lumps.
Preheat a medium size skillet and add 1 tablespoon of butter. Allow to melt and then add 4oz of batter. Cook on medium to low heat and be patient. Don’t flip until the bubbles start to form on the back of the pancake. Remove once golden brown on both sides.
