The 81 degrees you saw appeared after a long time of stressing the CPU to the maximum (about 10 min, I don't know exactly anymore) and represents the maximum it reached. The overclocking explain the temps. I have the same cooler with a 5800x3d. Idle temps are 33-37c and 50-60c during triple A gaming with fan speeds at 25-30%
