Large Whole Spotback Scorpion Fish Baked

One of my Hubby's fishing buddies gave him a 9.5 lb Spotback Scorpion fish often called a Sculpin fish though it isn't. After cleaning and trimming I stuffed it with lots of aromatics, seasoned with a Hawaiian seasoning blend and baked for about an hour. I'm thinking that when the 20 minutes were up that you release the pressure right away instead of letting it lose pressure naturally or gradually? The reason I'm asking is because when I did it immediately it took a lot longer to let out all of the steam, when compared to how long it took in your video. Thank you so much!

Back home when I was a little kid, my Granddaddy introduced me to the classic Mississippi Pig Ear Sandwich. I fell in love with them at first bite and sadly ever since I moved north? Finding pigs ears, trotters and snouts is hard as all get out...but, I found an Asian Grocer who DOES carry them things! They even got the Hog Maw!!!!

Good recipe! I make mine exactly like you do except after I coat them, I let the rest on a rack for 20 minutes before I fry. The coating will stick better and fry up more crispy..😊
