I have my current Dynasty as Purdue. I got fired two seasons in, went to San Diego State, did much better and managed to get my Purdue job back somehow. I've had great success since, even making it to the Natty, but despite that I've never managed to even get to the Big10 title game

I was just watching another creator's take on this and wondered about Austin Peay, which he did not consider. I thought I remembered Austin Peay beating the Cincinnati Bearcats when I was in High School (Roger Bacon), but my fact checking says UC easily won that game. APSU has beaten Kansas, though. I must have been thinking of the Morehead State game a few years later. Oddly, the NCAA page on FCS teams beating FBS teams includes a 59-0 win by South Florida as an FCS team over APSU as an FBS team on 11/18/2000. I didn't think Austin Peay was ever FBS. Another odd thing I learned off that page was that when Cincinnati defeated defending National Champion Penn State in 1983, it was technically classified as Div. I-AA, but was allowed to go back to I-A after fighting the demotion (and beating Penn State!).
