I Made a Mistake...Sourdough and FMF Isn't For Everyone!
Freshly milled flour and sourdough bread is very nutritious and tastes great, but it's not for everyone. I made a BIG mistake and learned another hard lesson on living life as a "zebra". I was reminded that now is the time to live life and enjoy being creative.
MCAS (Mast Cell Activation Syndrome) is affecting more and more of the population and has been linked to "Long Covid". I've had MCAS since birth, but even after all these years I make mistakes. I feel like I've taken five steps forward and ten steps back over the holidays. This time of the year can be tough for all of us, with the extra stress, indulgent foods, drinks and late nights, but you are not alone.

I don't know how this video popped up on my you tube feed but I had some Einkorn flour in the freezer and made the cookies. Amazing! I added sliced almonds to the top and used espresso chocolate chips. Yum!

Keep us updated on your new stove - I'm looking for another stove. Currently I have a GE that has two ovens, but the range top is very similar to yours. I'm finding that my bottom oven loses temperature drastically when I use both ovens at the same time......which is what I thought the point of having two ovens was 🤨. I thoroughly enjoyed seeing the different hydration levels - I'm making Rose Homestead's (Mary Rose) Sourdough Spelt bread the last couple times I've baked bread. It's stickier than I expected, but very good tasting!
Sorry to hear about your oven issues, it's frustrating...I know. I'll be doing updates on my new oven and the "learning curve" I follow getting to know how to use all the features. Do you know muxh about sorghum sourdough? I hbae w sorghum atartee that i atarted on 10/23. It pretty much doubles. I just don't know of it's ready to do stuff with
I'm not familiar with sorghum sourdough, sorry. When your starter is doubling on a consistent basis, say 3-4 hours after feeding, every time for 3 consecutive days it is considered "ready" to use for baking. Let me know how you do.
