8 g gelatine sheets
150 g milk
120 g sugar
60 g White chocolate
650 g Cream
2 lime zest
120 g lime juice
Mango compote:
1 fresh mango
100 g mango puree
50 g sugar
50 g water
2 g gelatine sheet
1 lime zest

Beautiful! Are you using a convection (fan) oven to bake these?
Yes, for this video I used an oven with fan.
The syrup temp is pretty high isn’t it? 244° is the usual.
For a better texture I go up to 257 degrees. 244 degrees is a little low your batter might be loose.

Hi, Milk can be replaced with butter milk but it will cause denser spnge cake which is totally fine 👍

Thank you for your amazing comment! I really love using different aroma combinations. They give freshness and flavor to the desserts. But basically you can skip that part add coffee liquor or just enjoy the plain mascarpone cream😊
I admire a chef whom can pipe macaron shells without a template nor a shaky hand. I'm amazed by the simplicity of the pistachio ganache which does not involve the making a pistachio paste first. I simply cannot wait to make those myself. But I will have to admit that I won't be a purist like you and will use only readily available almond powder, for the shells. I know... I'm lazy... 😅 Thank you for sharing the recipe Chef!

50 g egg whites, 100 g sugar, 200 g butter (room temperature), 80 g raspberry puree, In a double boiler heat the egg whites and sugar together till 70 degrees celcius or 140 degrees fahreniet and mix it in the mixer till stiff pick. Then add the butter and keep mixing till all corporated and add the raspberry puree. When you have the smooth mixture it’s ready to use! ✌️ enjoy! You can switch the raspberry puree with other fruits and make this recipe different flavors. Thanks for asking. ☺️
