Made with two flowers, wheat and rye flours. Wheat 576g Rye 144g Water522g Salt 14g Sourdough starter 144g I baked at 500 F for 20 minutes with steam or covered if baked in a Dutch oven. After 20 minutes open or Remove steam for another 15 - 20 minutes or until…right to your liking. Enjoy.

Great tutorial. There's one thing people are missing out from youtube breadmaking videos, because breadmakers already have all the automatisms to make great bread. And the more beginners get frustrated because they are doing everything as told, yet their breads are not great: you need to score your bread DEEP. A shallow cut that flattens straight and disappears (the wetter the dough the easier the bread "heals the wound") is not enough. Get a good deep cut so it stays open and provides less resistance to the creation of the ear.

In my experience, the Danish dough whisk is best used for Danish rye bread, which has a very wet, almost porridge-like, dough. I admire your persistence, though!
