Dustin was going through a divorce & custody battle so he had his own rage & method is bringing as much authenticity to the part but not at the expense or humiliation or assaulting another actor. This scene was filmed in Sanborn's flagship restaurant in the the 18th Century Palace, Casa de los Azulejos in the Zocalo (CDMX). The building is sinking as is much of Mexico City. It's a an amazing building. Breakfast as of 07-04-22 can still be had for $10.00. Rourke was well cast in this movie and Denzel perhaps deserved an Oscar which he won a year later for Training Day.
