I learned how to make these from my namesake Olia in Ukraine, Transcarpathia, close to the Romanian, Slovakian and Hungarian borders (so you will find version of these in those countries too!) This is one of the best vegetables dishes in the whole world. A dish from Sakartvelo (Georgia). If you make this, you will never make ratatouille again, the herb and garlic paste that is stirred through the vegetables at the end lifts it. I do love beets, but I think they really shine when dressed in something acidic and fruity. This salad was inspired by a brilliant Georgian salad called Charkhali. This is something my grandmother Lyusya used to make and also my mum. They called it 'so-oose' - literally sauce. It is one of my most favourite Ukrainian vegetarian dishes... of all time. Make it before courgettes and marrows go out of season!

Jake sent me here, too. I'm an American living in France. My son and I have been to Ukraine twice, in April 2022 and April 2023, delivering humanitarian aid to Bucha, Irpin, etc. We may be going again this year. We do what we can to support the war effort. I also feel the fatigue and especially the frustration with the US government and the Republicans who have turned their backs on Ukraine for political purposes. As an American, I apologise for that. I have been welcomed in Ukraine and thanked for the tiny amount of help my son and I have managed to bring to the people there. Now it's my turn to thank the brave Ukrainians for fighting for, not only their security and independence, but also for the interests of the entire Western world. I am, and will always be, with Ukraine.
