Vegan Gut Healing Soup
Gut health is necessary for overall health and a strong immune system. This soup is flavorful, nutritious and easy to prepare. A treat for the entire family.

INSTRUCTIONS
Break up a block of extra firm tofu and toss it with paprika, nutritional
yeast, garlic powder, and a little sea salt. Bake this at 400F for 25
minutes.
In a pot over medium heat, sauté the onion, carrot, celery, potato &
garlic in a splash or water until slightly softened.
Add the tomatoes, mushrooms, tomato paste, thyme, paprika, garlic
powder and nutritional yeast. Simmer until the vegetables have
softened.
In a separate container, whisk the flour with the vegetable broth and
add it to the pot. Bring to a simmer and cook, uncovered, for about 20
minutes. Thicken as needed with more flour our cornstarch.
Add in the peas, tofu, kale, and fresh parsley to taste. Stir until the peas
and have thawed and the kale has wilted. Enjoy immediately.

These look good, I think I’ll try this. Thanks. The recipe in your link needs to be corrected though; it doesn’t mention the garlic or baking soda you used, doesn’t identify the vegan seasoning (I’m guessing it is any salt free alternative) nor the amount, and nowhere is the time of baking mentioned there or in the video. I’m guessing you want us to experiment, and that’s always fun too! I’m going to start by guessing 1-2 cloves of minced garlic, 1/4 tsp of salt free alternative, and 1/2 tsp of baking soda. I will also try a 10 minute rest after adding the baking powder. I have some chickpea flour, perhaps I’ll try that instead of the gluten free flour mentioned… I think I will also add the other half of the red onion, coarsely chopped to the batter. I might start with 20 minutes baking, see if it looks right. You can see the wheels turning…
Recipe didn’t work for me. Cooked 45 minutes at 350 degrees F, and they still weren’t cooked. Could be because I didn’t use canned chickpeas but cooked my own? Maybe not enuf baking powder, they were too dense to cook through? Or maybe the chickpea flour was not the right thing. Oh well, it was fun trying.
May I have all the ingredients and their measurements?
Recipe ingredients are at the 5:13 mark. Ive made this and its very good. I'm making again today and going to switch out the soy sauce with marmite.

looks really good! I like the unusual addition of walnuts. If I might suggest, you could possibly make the video shorter (I didn't have time to listen to 20 minutes- 5 to 8 minutes would be more manageable - so I increased to double speed and skipped over the nutritional information, as I'm already sold on the benefits of these foods)
