The making of Tuna with Passion Fruit Sauce at Phu Quoc Pepper Farm
Segue in Italiano.
On a mission for @CooklyMe while I was escaping the European winter in Phu quoc Island. I went to a cooking class at the Pepper farm Phu quoc, joined by @the_real_xperience we made a few local recipes using the produce of the farm. A farm that mainly produces pepper since the island is famous for that. Among the recipes there was Tuna with passion fruit sauce, a tasty surprise to be honest. Here is a little video of the making of it.

    Bel video oggi sono stato a raccogliere fichi d'india e volevo sapere se le pale si posso no mangiare anche,, ma le spine sono veramente fastidiose con i guanti in cuoio mi sento pungere dapertutto anche negli occhi

    Sono una donna messicana, vivo a Varese ed é la prima volta che vedo preparare "nopales" in questa maniera. Si devono prendere teneri e togliere con molta cura, soltanto le spine. Bravo con questa ricetta, quando andrò nel mio paese li preparerò in questa maniera. Sono molto babosi anche tenerissimi.

    1) Non mi è sembrato che le 9:53 pale siano state CUCINATE; 2) Non userei MAi un coltellaccio (raccomandato " molto AFFILATO), ma- tagliando prima, non dopo, le pale a fette, userei un pelapatate; 3) spremendo un limone, evita di togliere i semi dopo ad uno ad uno, usando un piccolo colino. Comunque, avendo tante piante di fichi d'India, proverò la ricetta.

      Nel video uso 2 l di alcool, 2 di acqua e quindi 2 kg di zucchero. Se usi un litro di alcol devi fare lo sciroppo con 1 litro di acqua e 1 kg di zucchero. Fammi sapere come viene. ✌️

    Your video is easy to follow, though I wish you would have included more information on the time between each step. More importantly, I would have liked to see how you prepared the lemons. We had to assume from the video that you removed the outer skin. Lastly, you are not gaining anything by using brown sugar. 99% of brown sugar is just white granulated sugar that has been dyed with molasses. White and brown sugar are both equally "processed", sorry to say.

      Don't be sorry, that what the internet is all about! Sharing knowledge and improve according to it! Regarding the time between each steps there is no fixed time for any of of them. The target is to reach the texture that you like and test it as I did on a plate. Regarding the lemons the ones in the video are the left over of making limoncello. The video recipe is also on my channel. To make Limocello we only use the zest, the yellow part to be more clear. However, many recipes uses the zest for the marmalade also. But in my case I had the one without it. After I sliced the lemons because i like a more "chewy" texture but you can make it the size or shape you prefer. I hope this will make it more clear and if you have any other question please send me a message trough my social media channels. I will be more than happy to reply.       Salve Fernando! In passato ho provato ad utilizzare le mele per abbassare la quantita' di zucchero ma senza successo, dopo un po i barattoli si "ammuffivano" anche in frigo. Direi che e' possibile ridurre lo zucchero ma solo per piccole quatita' di marmellata e magari messa in barattoli piccoli in modo da aprirne un po' per volta. Pastorizzarli dopo la chiusura di sicuro aiutera' a conservala piu' a lungo. Spero di essere stato d'aiuto.
