Taranaki Hangi July 2016
In July 2016 we had a small family catch-up at which time we had a hangi. A hangi is the traditional Maori earth oven feast that is often had at special occasions, celebrations and large gatherings. This is only a very small hangi but the principles are the same no matter the size. Basically rocks are heated in a fire for several hours while the food is prepared and placed in a suitable basket. The hot rocks are then placed in a hole and the basket placed on top. Wet sacks, sheets or similar are placed over the basket and then dirt is piled on to trap in the steam and heat. After the food is cooked (which varies depending on how much food) you reverse the last few steps and you are good to go. There are different methods for preparing a hangi depending on where you live and who has taught you but the basic method is the same. Hangi food is delicious, it is a combination of roasting and steaming so is very moist. There is an unusual taste through the food from being cooked underground but it is by no means unpleasant. In fact, once you have tried hangi a couple of times there is no better meal. Hangi pork and mutton is some of the best eating you will ever do (and Kumera (sweet potato)). If you are ever visiting New Zealand make a point of trying a hangi meal. Even better would be to find someone that will let you be involved in the process!

    See the bro uses the correct protective footwear while using the chainsaw, (me too 😆), also great to see you're using the best wood including good stones as crap ones explode/break up, bet your Kai is the meanest👍.PS- Your Hungi is exactly how I/we used to do it, (hot getting the stones out of the fire aye). 🥵

    Yep. Heapsa time and patience goes into preparing a Maori hangi. Spent time in Fiji years back with the opportunity to help the Fiji whanau prepare a lovo. Same method as a hangi except it's cooked above the ground. It was tumeke. Bula vanaka

      Kia ora Diego. The water is cold, and the hangi was probably cooked for 4 to 6 hours.

      Odd comment. Racist, but odd. If you are calling me a palangi I have to assume you are from the islands and not Maori so why you are upset about a palangi doing a hangi is strange. I could understand you being upset about me doing an umu but not a hangi. Plus where does your line of thinking end? You must have typed your remark on a phone or a PC which would have been more than likely designed in the USA, Japan, Korea or China and built in Korea or China. If I can only do things of European invention you should only be allowed to do things of Pacific invention so stop using the internet and computers as you aren’t Japanese or Chinese or American.     WHY NOT THE BACK SIDE OF A WIDE HEAVY RAKE? THAT WOULD MOVE THE DIRT AWAY WITH EASE...OR PERHAPS ONE WIDE AND LONG FINAL WET CLOTH TO PILE DIRT ON AND REMOVE BY PICKING UP TWO CORNERS BY ONE BLOKE AND ON THE OTHER TWO CORNERS ANOTHER BLOKE AND LIFT ENTIRE DIRT MOUNDED CLOTH IN UNISON AND STEP ASIDE AND SIMPLY REMOVE THE HEAPS THAT WAY..?
