Does that mean that I cannot use a proxy-ish tool (Fiddler for example) to capture traffic from the Island browser to use for app development and testing purposes?

Theory, theory, theory. Not once anywhere can they show how it looks or works. If it has the appearance of an internet exporer and the functionality of a potato, then all the features that were discussed for 40 minutes will not cover it. You have to order a demo to learn something.
