Fanning the sail is very important in roll tacking. If you don't, you don't get the forward thrust. Try to release the sheet when going up on the wind, then to make sure to pull in the sheet while flattening the hull. If you don't release it while tacking, then you have no sail area to pull in for the thrust, while you flattening your hull. Another word, only rolling the hull will not provide the thrust.
