    I personally only pressure can low acid foods. We know for fact that people have been water bath canning low acid foods for decades if not centuries. The choice is yours.

    It wasnt ... youre doing canning like Iam doing ! I add 2 tbls vinegar to make it more acid . Made pork soup ...added 2tbls vinegar in each 500 mL jars . I even add vinegar on my stove top soups .... love the taste !

    Total newbie. Does the vinegar give the beans the acid it needs to be able to water bath. I tried water bathing beans a few years ago and needed to throw them away. I would prefer to water bath anything I can. Pressure canning makes me nervous

      @2283041 I would say just give it a try and see what you think . You could always can them like potatoes just skin them cut them up add water canning salt and maybe alittle lemon or vinegar for preserving and water bath 3 hours. That how I do my regular potatoes. I do rinse my regular potatoes multiple times before canning.

    Love your video!!!! i watched another lady and she said you have to soak them before or they wouldnt be done??? Are yours fine to eat like they are? Ive never canned but thinking about going this weekend to get the stuff. Sorry for all the questions 😇

    I am from Romania ,No pressure canner here ,I can with water bath ,i dotn live in fear of botulism ,i have canned green beans years like this ,never went wrong ,potatoes i never did ,but i did many other things ,I tell what i do not others need to do hahaa ,but not everyone can have acces at pressure canners much love and blesses

    I bake mine in the oven first, scoop out the potatoes into a bowl, then add butter and brown sugar. Mix it well, then put it in jars - but keep it under 1.5 inches of headspace. I use my pressure canner, do 10 minutes of steam release, then put my weight on and once it's up to pressure, I can for 25 minutes since they are already cooked. Works great and it ready to each out of the jar.

    I understand that this is an older video but my grandmother and aunt has always water bathed their foods and like everyone else says no one got sick or died. Sadly i wasnt taught how to can so i am a self taught canner and i do water bath canning. Thank you for your video's that you do that inspires and helps teaches how to water bath can.

One day it became clear. I quit trusting the government and their fear tactics and begun trusting millions and millions of people who have and continue to feed their loved ones with canned food.

    Question: although the green beans can be opened and used right away, do you and others have wait times or cure windows after canning where you will wait for "x" time to pass before starting to use them? Maybe because they will be softer, or saltier. Thanks!

    I would add some vinegar with the salt. Can't smell or taste the vinegar. Teaspoon to tablespoon of vinegar. Can't hurt and helps for making more acid. Then water bath 2 hours.
