Is lassi production requires pasteurisation of lassi for increasinng its shelf life ?
Pasteurized milk requires to use for preparation of curd but after preparation of lassi not requires pasteurization process.. proper milk boiling, use proper culture, RO water, and proper storage temperature are main parameters for shelf life.. addition of chemical preservatives are not allowed in any dairy products as per FSSAI guidelines.....
@@prakashshirahatti2571 thanks a lot sir, I am from Pune and looking for production of lassi. As we have experienced last year some shelf life issue when we had tried some small scale production of it. So I thought it(pasteurization) will increase shelf life of it
