🌶️🇹🇹 Trinidad Curry Chicken 🍛 | Spicy, Flavorful Caribbean Food
In this recipe, I’ll show you how to make authentic Trinidad Curry Chicken, a dish bursting with rich Caribbean flavors.
Ingredients:
- 2 lbs chicken legs & thighs, cut into pieces
- ½ part water to ½ part vinegar (for washing chicken)
- 2 limes (for washing chicken)
- 1 bunch shado beni (culantro)
- 1 bunch cilantro
- 4-5 green onions
- 1 bunch thyme
- 1 handful garlic cloves (for green seasoning)
- 1 bird pepper
- 1 onion, chopped
- 4-5 additional garlic cloves, diced
- 4 tbsp oil (for marinating)
- ½ cup Chief’s curry powder
- ¼ cup freshly ground cumin
- 2 tbsp olive oil (for cooking)
- 4 potatoes, peeled and diced
- Water (enough to cover the chicken)
- Basmati rice (for serving)
Instructions:
We start by thoroughly cleaning 2 lbs of chicken legs and thighs using a mix of half parts water to vinegar and two limes.
Next, we prepare our vibrant green seasoning blend-an essential in Trinidadian cooking. This blend includes shado beni (culantro), cilantro, green onion, and thyme. I packed as much of these herbs into my mini food processor, along with a handful of garlic and a fiery bird pepper, to create a flavorful paste. I also chopped an onion and a few more cloves of garlic to set aside for later.
The chicken pieces are then marinated with the green seasoning blend, the remaining unblended herbs, sliced onion, and diced garlic. A drizzle of 4 tablespoons of oil, half a cup of Chief’s curry powder, and a quarter cup of freshly ground cumin are added for that iconic Trinidadian taste. Mixing thoroughly, the chicken is coated in this fragrant curry marinade, ready to infuse with flavor.
I then peeled and diced about 4 potatoes, setting them aside. In a hot pot with 2 tablespoons of olive oil, the marinated chicken is fried down until it's half-cooked, allowing the curry to toast beautifully without burning. At this stage, enough water is added to cover the chicken, letting it simmer until it's nearly done.
Finally, the diced potatoes are added to the pot, cooking until soft and tender, absorbing the curry's rich flavors. The result is a succulent Trinidad Curry Chicken, perfectly paired with basmati rice.
Serve it up and enjoy a taste of Trinidad in your own kitchen!
