荷蘭豆炒牛肉 | Snow Pea Stir Fry Beef

Ingredients Used:
Skirt Steak 350g - Thinly sliced
Snow Peas - 1 Cup
Garlic x8
Ginger - sliced 1 large piece
Water -1/4 Cup
Chicken Stock - 1/4 Cup
Beef Marinate - Marinate overnight or at least 2 hours
Corn Flour - 1 Tbsp
Egg White - 1 egg
Soy Sauce - 1.5 Tbsp
White Pepper - 1 Tbsp
Rice Wine - 1 Tbsp
Water - 1/2 Cup
Oil - 1.4 Tbsp
Seasoning (Video Showing 2 portions):
Salt - 1/4 Tsp
Sugar - 1/4 Tsp
MSG - a sprinkle (optional)
White Pepper - 1/2 Tsp
Chicken Bouillon - 1/4 Tsp
Oyster Sauce - 1/2 Tbsp
Corn Flour -1/4 Tbsp
Soy Sauce - 1 Tsp
Water - 1/4 Cup
Steps:
1. Marinate the beef for at least 2 hours
2. Prepare the seasoning
3. In a clean wok, add oil and snow peas and stir fry for a few seconds
4. Add water and chicken stock and cook with closed lid for 2 minutes
5. Take out the snow peas and drain the liquids
6. In a clean wok, add oil and marinated beef
7. Cook one side of the beef then add ginger and garlic to the middle of the wok
8. Add in the snow pea and the seasoning
9. Stir fry for a minute

    Hi, i used to get a fried crab dish at this one Korean restaurant that im now thinking was just serving a Canto dish- anyway, we used to be able to eat the hardshell crab- they were big pieces of legs and other parts of the shell that were genuinely the hard shell and not a molting crab. Can you please tell me how to fry a crab properly/long enough to make the shell edible? Thank you

      It’s the Szechuan Peppercorns or Sichuan Peppercorns. You can easily find it at any asian store :)

    i will never understand the point coating the inedible shell with flour and all that seasoning. how does it ever impact the crab flesh which diners will then spend the next 2 hours trying to extract with excrutiating effort?

      The shell isn't inedible, lol. One of my favorite dishes is a deep fried hardshell crab dish- they'd fry it for a long time to make the shell edible- very very crunchy but totally edible.

    There are no jalapeño in China. 辣椒 just means chili of any kind or color. Those legs must be overcooked - they cook very quickly.
