Rofco B20 bread baking
Rookie home baker (that's me!) utilizing Rofco B20 to the best of his ability. The loaves in the video are a mixture of spelt, wheat, and rye flours, hydration is slightly above 70%. Need to work on dough composition, shaping, scoring, shimmying the loaves off the peel, and probably other steps too, but overall I'm fairly content with the results.

    How come you can teach English? You need a teacher yourself, especially someone to teach you pronunciation. Your grammar is okay but the rest is terrible. I showed this video to my Tesol colleagues and we've been totally gobsmacked!

      Hi :-). Masovian Voivodeship, some 20/30 kilometres north from Radom - or 70/80 kilometres south from Warsaw.

    It is really astonishing just how much the Polish accent has changed over the past 70 years. My experience with the Polish accent growing up had mostly been with people that moved out after the war, however this experience was from multiple countries and records. Today whenever I hear someone from Poland speak I find the difference is night and day. All this makes me wonder just how much other accents are changing.

      Raitsa Hmm, that's a really interesting remark... Is that accent difference between now and than really that clear? I'll try to come up with another idea for a video where I could mix Polish and English again.

      the.bilingual.sparrow It could be a regional thing within Poland. When I first noticed it, I thought that it could just be the local country causing it. However I have since heard the same in multiple countries from the same sort of people (people that would have moved out during the war or some first descendants). It is hard to pin down (especially since I barely speak Polish myself), however if I had to describe what the effect was would be a heavier focus from the sounds like dz, sz and cz. The modern accent feels like it is lighter in those areas and moves past the sound quicker. It could be that the language as a whole has increased in it's pacing. By extention this will affect how English is spoken as unless you learn several languages when very young you wil be using your first language as a frame of reference. To be honest we have always known that this sort of thing happens, just you don't observe it too often in a lifetime (even when it does happen). I guess similar to the caught/cot merger in the US where the two distinctively different sounds become the same that is taking over currently.

The changes are visible when you watch Polish movies from, let's say, 50 years ago - or better yet: from before the war. Are you by any chance of Polish descent Madam, or perhaps your ancestors lived in Poland?...

      the.bilingual.sparrow My Gandparents were from Poland and passed in the past few years. My aunt also married a guy from Poland and has been back there to visit relatives. My Cousin even married a girl from Poland. My surname actually is Rajca but good luck getting people of non Slavic origin speaking that correctly (hence why I often write where available Raitsa).

I was thinking about making a video about Warsaw Uprising now, briefly mentioning the event to foreign viewers who happen to stumble upon my channel, but I slept on the 71st anniversary of Uprising's outbreak just a few days ago... and don't know how to get onto the subject now. But who knows, maybe I'll find a way. EDIT: doh, I'm sorry if I mistakingly referred to you as Madam (thought Raitsa is a first name).

    Thanks for this video. My grandparents were Jews born in Radom and I have never seen any photos or anything.

      Wow, so nice to hear that... Before the war the Jews constituted about a third of the city's population. I could have included in my video a monument which currently stands in the place where Radom's synagogue once stood - before the Germans burnt it down. As far as I know this monument is the only sign of Jewish presence here at the moment... At around 6:30 mark, when you can see the yellow-white church, I am filming from where the ghetto was located during the occupation - the synagogue was just two blocks away. Your grandparents must have walked this street... and must have seen most of the places shown in the video - besides the ones that hadn't been built back then :-). Your grandparents are/were Holocaust survivors, am I right? And you sir, you live in Australia. Twisted, people's paths are :-).

      the.bilingual.sparrow I'm so sorry for not replying! I don't know what happened :-\ Thank you so much for sharing that information. That's just right. They came here after the war because they found out someone had moved here beforehand. I have never been to Poland but I'm considering trying to visit in 2015. I'm also considering learning a bit of Polish (but I don't know when I'll have time and mental space with my other languages and university :-\). It looks like a lovely place! I can't express how thankful I am for you sharing it :-)

      nated0gggg Good to hear from you again! Say... I teach English to Polish people at home, and even though I've never done it before I could perhaps do it the other way round - that is to teach Polish to an English speaking person. I've got a decent camera so Skype is certainly viable. The problem is I'm somewhat out of date and depend heavily on old-fashioned printouts... But if you were ever up to it at some point, drop me a line. Also, if you ever come to Radom, I'll try to show you around. It would be nice to get to know someone from another part of the globe.AND I'm just about to upload a new video about Poland... perhaps it'll give you another glimpse of the land of your fathers. I'm having some issues with YT not being able to process my video (so I'll have to make do with poorer quality), but it should be up either today or tomorrow Polish time, so stay tuned :-).

    Dzięki za miłe słowa, bo takie było zamierzenie :-). Chciałem pokazać Amerykanom (z którymi od czasu do czasu komunikuję się na forach czy mailowo) jak wygląda Polska, bo o ile wykazują oni duże zainteresowanie Europą, to o naszym kraju nie wiedzą prawie nic. A że dla mnie Polska od jakiegoś już czasu to głównie Radom, to chciałem, żeby tytułowy "rzut oka" dotyczył naszego miasta. Jest flaga, jest godło, są ludzie... Jakoś ten filmik - mam nadzieję - prezentuje obcokrajowcowi Polskę i Radom :-).
