      It's actually a fava bean, which is different than a pea, but in the same Fabaceae/Legume family.

      I find it's better to peel them while they are still hard. They ripen while drying. That said, you'll want to wait until they are starting to turn orange. A little yellow is ok.

    an excellent tutorial - many thanks - i just wish i was able to get a oil/water clevenger in the uk @ 24/40 - its like looking for a needle in a haystack !

      If you have glassware that is a different size system, then by all means, use that system. You might need to adjust the size tubing to transition from the cooker.

    Oh! When he talks about elemental beings, reminds me an educational curriculum, courses I engaged in for my own designed education over years, and that elemental being I learned it can be named a "Deva"... A teacher once described "the Deva of the machine, try praying and yelling at it" so I would do this a lot with my cars. My first Jeep I named Old Bessie, like my ol' singing, milk-bearing cow friend but that was just what I named my first car 😂 My last jeep was named the Purple Pooper, tho. I adopted her from a good friend and she had a finicky starter!! So I started to literally call the Deva of my jeep to please please start this engine!! Lol! I got through so many driving adventures together with people💜, and so often I'll wonder if it really worked like that (because I know about fixing cars, so I knew how silly it was to expect my crappy starter to cooperate realistically, lol!). I imagined the Deva of my jeep as like a ballerina on a spring in a music box, funny enough. Never did that with anything else :-p

    Another tip for keeping dried stuff from molding in the jars is to "cure" or "season" them for ten days, same as when food is dried. Half the battle is to dry the stuff longer than the machine or manual indicate (as others here have stated) while the other half is to DISTRIBUTE the moisture which remains. Whether dried or freeze-dried, initially, the OUTSIDE of each "nugget" is drier than the INSIDE. (Using totally random numbers to make a point) while the total moisture may be 10 percent, its really 2% on the outside but 8% inside. Where all that moisture collects on the inside becomes the HQ for mold development. If, once they're in jars, you give the jar a good couple of shakes once a day for 10 days, the moisture becomes evenly disributed, and the problem prevented. Just check each day to see if the items show signs of sticking to each other. If they do, pop them back in the machine. I do that for dehydrated foods and never had a problem.

      You could. The real trick here is making the transition from your boiling pot to the glassware.

      Hi David, that's certainly a possibility. Many people use the hydrosol for a gentle spray of the oil, like a pillow spray, laundry spray, in a bath, or as a skin conditioner, depending on what oil was distilled.

      Erik, Dennis' approach is really dialed in for home producers, but there are commercial distilling units that should allow you to still apply the same principles, but at scale.

    I am eating the last of last year’s crop as I start to dry this year’s. Still very good. Stored in a glass jar in the pantry closet. It was an experiment to see if they needed refrigeration and how long I could keep them. They were not sterilized in the beginning, nor dipped in alcohol. Since I did over 300, I merely gave one or two squeezes per day to each fruit.

      Yes, they keep fairly well without refrigeration. I found that they tend to dry out over time and get hard to chew.
