Have the same set up but cooler and oilsump from -86

The reason you had trouble with the coolant line from the cylinder head, is because the 1100 motor block is from 95-98 and your 750 is from 92-93. The later versions had the thermostat on the outside of the frame, on the right, instead of under the tank between the frame rails.

my speedo went to 160 and it would do pretty much all of it

A snapped chain locking up the final drive with the engine revving would cause something similar. There is no way that carnage was caused by falling over.

Does the engine have to come out to get to the gears?

does any one know that if you tighten the springs too tight is won't cause the clutch to engage as good?

merkur102, do you still have all the info on this clutch assembly? I put in new cam chain guides and have run into a problem which I believe is clutch related. If you have and can help I can be more specific. Cheers

Hey Merkur where are you located? Do you do work at your residence? I cracked my crank case on my 2006 gsxr 1000 . I got new crank cases but the dealer ship near me in louisiana wants crazy amount to swap them.
