A Mince Pie-inspired Tart (without mincemeat) | Christmas Baking | Tea for Two

Hey guys! 👋 Welcome to Tea for Two. This "mince pie" is essentially an apple, pear and cranberry pie that's flavoured with Christmas spices and then topped with a crunchy crumble. Would you still call this a mince pie? I must admit that I'm not a huge fan of traditional mince pies. It's very likely because of the mincemeat - too much dried fruit, and the sauce is too strong and tangy for my lik...

    Hey guys! I've included a link to the savarin mould I used in this video in the description box but I also wanted to point out that while it looks like a donut pan, a donut pan sadly will not work. I tried it when I first made tiger financiers and the donut pan didn't allow the batter to bake over the centre piece (it's too tall), so I was left with financiers in ring donut form. No loss though, I just drizzled the ganache like icing over the donut-financiers - still tasty!

      Are palet breton and sable breton différent?

    • @teafortwo
      @teafortwo 2 роки тому

      Hi. @Sady I actually spent a long time pondering the same question myself. It seems both these terms are used interchangeably and I was very confused but after a lot of research, this was the conclusion I came to but I am in no way saying this is the definitive answer. The short answer is, no, they are the same thing, just different names. First, the Breton/Brittany pastry dough that makes these cookies uses specific ingredients (egg yolks, salted butter) and process to create a very light, crumbly and most importantly a tall/thick cookie. This dough is often used as the base for Breton tarts and the smaller cookies made this way are specifically called palet Breton. (Palet means ‘puck’ in French, like a hockey puck) In other words palet Breton can be understood as “the puck shaped Breton pastry dough cookies” making specific reference to the shape of the cookie. On the other hand ‘sable’ in French, means ‘sandy/crumbly textured’ which is a very common description of many cookies so over time sable came to refer generally to all cookies of a sandy/crumbly texture (e.g. sandies). So a sable Breton can be simply understood as a general term for Breton pastry dough cookies. I believe (not 100% sure) that there are a thinner variety Breton cookies that aren’t baked in rings so the sable Breton name would include both palet and thin kinds perhaps. In the end, I would say they mean the same thing with palet Breton probably being a more traditional name, whereas sable Breton is a more general name. I guess the most important part is they both use the Breton pastry dough (which distinguishes them from other pastries and cookies) and their naming system probably isn't too important? Sorry for the super long answer. I hope it made some sense and it helped. 😅 If anyone else knows better, please let me know.
