      You’re so right.. 🫠 Thank you for your very constructive feedback. I did not think about step by step instructions for beginners, I will do just that in the future. If it’s still helpful at all, I used the sauté option on high for about 10 minutes to brown the oxtail before adding the rest of the ingredients and proceeding to the pressure cooking stage.     At 0:38, in your video demonstration did you add one cup more of upfu, or two more? I ask because I always get my sadza too thick and dry. At this small of scale, a whole more cup is is a big percentage of the total. It looks like you made two dumps of upfu after kukwata, but not looked like whole cups.

      Hi there… yes I added two dumbs of upfu after rakwata. To answer your question about your sadza being too thick and dry .. what you need to get right first is the initial consistency paku kurungira which is the first stage. If you add too much upfu at this stage likely paku mona sadza you get it too thick and dry. So, what you need to make sure is paku kurungira initially you have medium thickness so less upfu is better, keep mixing until raakukwata. If you find the mixture is too thick at this stage, add hot water making sure the consistency is medium thickness. Then paku mona once rakwata you gradually add upfu 1-2 small cups. It’s difficult to give exact measurements because it all depends with the size of the pot you’re using etc. but if you watch in my video, I’m using a small pot …so I’m showing a general guide which can be adjusted accordingly depending on pot size. What to always remember is medium thickness is best paku kwata stage and paku mona gradually add upfu depending on pot size. Always add less upfu, mix gradually then increase upfu mbichana mbichana if necessary. It’s also important to note that each time you add upfu this increases the thickness so less is more. If you use this approach you will soon get the perfect consistency you’re looking for. Try this and let me know how you get on, best wishes.

    How long can you cook if you don't have a pressure cooker

      If you soak the beans overnight you can cook them for 1 - 2 hours if you’re cooking/boiling stage on the stove. It all depends with the variety of the beans. Generally, its faster on gas stove compared to electric stove but remember to cook on low to medium heat for both gas or electric stoves. Also, add enough water depending on how much beans you’re cooking make sure the water covers the beans. Keep an eye on the beans checking them every 30 minutes. Best wishes!

    So it’s ok to add the peanut butter salt and sugar in the pot while cooking. Someone said if I add this in the cooking process my porridge will become runny/watery

      Hi there… yes allow the porridge to cook through first making sure you have the right thickness… it’s best to add the salt, sugar and peanut right at the end when the porridge is almost ready to serve.. it is true that adding all this a bit too early can result in it being runny/watery.

    No instructions on the pressure level of the cooker...some things are cooked a high or a low simmer; and also important whether to let pressure drop on it's own, or run water on the lid to depressurize immediately.

      Thank you for your comment. The reason I can’t be too specific on pressure cooker levels etc. is because pressure cookers all over the world are very different some are electric whilst some are stovetop with varied pressure/power levels etc. This recipe is a general guide to be used alongside each specific pressure cooker using manufactures guidelines. I couldn’t possibly be too specific otherwise I might end up giving the wrong instructions.. as I’m sure you can appreciate how dangerous pressure cookers can be if we do not follow specific manufacturer guidelines and instructions.

    1:06 That's exactly like Swahili. We say kukaanga nyama to mean the same thing. In Kenya, we cook a similar meat & green vegetable dish & serve it with ugali which is a firmer version of sadza. Im going to try your recipe.

      That’s very interesting to hear this .. Swahili and Shona words are almost identical I know other words and phrases that are also the same. Thank you for sharing. I’m quite amazed how a lot of us Africans seem to have more in common than we realise and we also unknowingly have recipes like these in different countries- would be interesting to learn how this happened in the history we share.       Great!!! 😊 It all depends with the cut of beef you’re using they all cook differently time wise. You can use any beef cut for this recipe just make sure you cook the beef until it’s very tender and well cooked, then you add the seasoning and veggies to finish off as I did in the video.       @@GellySibanda-o4o I did not boil the meat first with any additional water because usually the meat already has its own water weight so I just started by frying it with a bit of cooking oil this way we can get all the beef flavour through browning the meat, the water weight is then released from the meat during this frying stage. Depending on the cut of beef, you can add more water at this stage so as to cook through the meat properly or you can allow the meat to cook through with its own water before frying again …. This is what I did here.

      Garlic and pepper have been a staple in my Zimbabwean home for 34 years of my life. In fact, all my extended family members also use these ingredients often in their cooking.

      Hi there .. Pressure cooker time very much depends on the type of pressure cooker being used. Here I’m using an ‘Instant Pot’ pressure cooker which is one of the faster cookers for this method/recipe. So I gave the time according to the Manufacturer instructions.       Ohh woww! I didn’t know our Tswana (Botswana) neighbours also cook this dish. What do you call this dish in Botswana? 😊 it’s interesting how quite a lot of the Eastern/Southern African countries share similar cuisine. But then again history tells us the Tswana (Botswana) 🇧🇼 are originally from the Bantu Tribe just like most Zimbabweans 🇿🇼 I also recently learned they make this very dish in Kenya 🇰🇪 too (also Bantu origin). Thank you for sharing @boldpicturesgarderners it’s interesting you call the (porridge) shadza, and in Zim Shona language we call it (sadza) the words sound similar too. I’m aware that Kenyans 🇰🇪 and Zimbabweans 🇿🇼 both originate from the Bantu Tribe, and we share very striking similarities in some of our native languages Swahili and Shona in particular.
