Welcome to my channel! I am Duncan Lu, a TV cooking show finalist, cooking presenter, recipe writer and astute home cook of Vietnamese cuisine. I am a Vietnamese-Australian who enjoys food from all cultures around the world and aspire to share this passion with kids and young individuals in Australia.
I competed on Channel 7's Plate of Origin cooking show where I served Vietnamese home-style recipes to arguably three of Australia’s biggest food authorities, Matt Preston, Manu Feildel and Gary Mehigan.

Mi Quang Ga l Braised Chicken with Rice Noodles l Vietnamese Recipes l Duncan Lu
🚨 If you’re ever travelling through Central Vietnam, a bowl of mi quang is a must do in Da Nang. In this central-Vietnamese delicacy you can expect, soft and chewy rice noodles served with quick-braised marinated chicken, eggs, and doused in a golden umami-filled broth.
Like mi bo kho (Vietnamese braised beef with noodles), mi quang ga is a dish I wouldn’t categorise as a Vietnamese noodle soup or a Vietnamese noodle salad but somewhere in-between, as the noodles and chicken are not completely covered with broth, like you would see in a bowl of pho, bun bo hue or bun mam.
If pho, bun bo hue or bun thit nuong are already popular in your household or a dish you regularly order when out, grab yourself a cockerel from Aurum Poultry Co and a packet of mi quang noodles from the Asian supermarket, to experience the delicate flavours and exciting textures of the Da Nang delicacy.

Chicken marinade
1 whole cockerel, chopped into medium pieces
1 teaspoon anchovy salt
1 tablespoon premium fish sauce
½ teaspoon Chinese Five Spice powder
½ teaspoon turmeric
½ teaspoon salt
1 teaspoon sugar
Other
5 tablespoons neutral cooking oil
4 cloves garlic, crushed
2 Thai shallots or 1 red onion, crushed
1 red chilli, crushed (optional)
½ teaspoon turmeric
½ teaspoon Chinese Five Spice powder
750ml-1L water
6 hard-boiled eggs or 300-350g hard-boiled quail eggs
1 bunch Vietnamese/butter lettuce
1 bunch spearmint (húng cay) or mint
½ bunch coriander, roughly chopped
Small bag (250g) bean sprouts
600g dry mi quang noodles/pho rice noodles
100g roasted peanuts
3 toasted rice paper sheets
Chilli oil (optional)

Hi, great question. For vegan/vego pho yes. I personally find the char overpowering and does not complement the fresh veg flavours.
Ir looks delicious! I wanna try! - Sidenote: I heard that resting doesn't do anything to conserve juices and encourages carry-over cooking. Can you speak to that?
Resting does encourage carry over cooking, for chicken thighs I don't believe it matters too much when compared to a medium rare steak. I find if you take perfectly cooked chicken off the grill and cut into it it'll leak out meat juices and dry out 😐...unless you've overcooked it and the juices have already dissipated.

Hi Jacqui, of course you can. Sometimes I exclusively you chicken maryland only. The key is to have chicken on the bones as that's what will allow the savoury flavours in the sauce to develop.

I made this one with canned tomato sardine by following your recipe with cilantro and jalapeno and vietnamese carrot raddish pickle bought from banh mi store, turned out to be fulfilling lunch meal... this one does not need pate and mayo for regular banh mi cause sardine itself is already fatty fish...

I don't know if it's an immigrant thing but my parents are also immigrants to the US and since I was 5 I can remember sardine banh mi's, this really brings me back everytime I take a bite.

@DuncanLu I also wanted to add that I tried banging the frozen rolls on the bench top to separate them and it only worked for a couple. After destroying a lot of them from repeatedly banging them on the counter I realised I could just microwave them for a few seconds and they separate easy!
@@andreiesdailewatts they usually seperate quite easily after a tap on the bench. Great problem solving though 👍
