More than 25 years ago Dan could have guessed endlessly on where his experiences in the United States Marine Corps would take him. Its safe to say none of those guesses would be owning a classic Southern BBQ joint in New Jersey!
A while back while reliving his Marine days with his wife Katie over a plate of slow smoked brisket Dan came up with the dream. The dream to own a little place and serve the kind of food that he loves to make and feed to all of his friends.
For us at Red White & Que, BBQ is more than just delicious food. It represents a rebellious spirit while still holding fast to old school American traditions. It's the food we eat when we come together with friends and neighbors in celebration.

Our Story (update!) Another Mother Fermentorium
Our story now includes a whole new business! Another Mother Fermentorium is our small batch fermentation go just on the other side of town in Kearny, NJ. We specialize in craft hot sauces, naturally fermented pickles & kraut an also make and bottle all of our own Red White & Que BBQ sauces.

:20 My beautiful, wonderful, much-missed mother was born in Kearny in 1918. I moved to Australia in 2007 & I can state that Taylor's Ham is the most sorely missed food for me. xx

So im from Jersey....but work has me out here in Texas now. I just ordered a batch of taylor ham/Pork roll because we cant get it here. Crazy expensive to ship....SO>..i have access to wild hogs here and trap them....I think im gonna take this recipe and combine it with some wild hog to stretch it out and MAKE me some pork roll!! WILD HOGZ roll. Because I hunt, I already have the grinder, sausage stuffer, casings...etc. Im liking where this is going!!
You should be able to get John Taylor Pork Roll at HEB.
Well first of all the name is Taylor Pork Roll not ham. Look at the packaging. It says Taylor Pork Roll.
When it was first made, it was called Taylor Ham, but around the turn of last century, the FDA put strict guidelines on what could and could not be called ham. So, Taylor, as well as all other makers, call it pork roll. But some people still call it Taylor Ham. Sorta like down south, every soft drink is called Coke. "What flavor Coke do you want?" Or, some people call a sofa or couch, a Davenport. The Davenport company is no longer around, but some people still call a sofa a Davenport.

That was way too much pink salt for that amount of bacon ! You are going to make someone sick . 1 tsp for 25 lbs is the recommended amount . 🤦♂️
Pork roll is the bomb
Im looking to make my own venison pork roll, (im from central Jersey, and yes there is a central Jersey) what venison to pork ratio would you reccomend? Thanks in advance!
Formally from Ardena and Asbury Park NJ. Where our accent is not North nor South, but a blend of both with a little more Sass. Best of both worlds.

Why not throw the spices and such in with the meat in the buffalo chopper?
Spices will not mix properly and stick to the sides only. Same when making sausage.

I've been looking for a recipe to make pork roll at home here in Maryland. It was hard to find until I came across your video. Does your recipe need bacon to make it proper or is that an extra touch? Thank you very much for this video.
Dark Doink I’m glad you like the video. You don’t need bacon to make it, you can use all pork shoulder. Easy to get at your local store. Enjoy!
