Perfectly White Buttercream
There are so many types of buttercream but the simplest is an American style buttercream, here I show you how I make mine so it perfectly white and silky smooth, perfect for piping, filling or covering you cakes!

Recipe:

Butter:Icing sugar
a few tbsps of cooled oiled water or any flavouring of your choice
1. Beat the butter (I prefer salted), ideally in a stand mixer, for 10+ minutes and it is very light in colour and silky smooth.
2. Sieve your icing sugar (my favourite is Silver Spoon), add half to the whipped butter, beat on low until the sugar is incorporated, then repeat with the second half of the icing sugar.
3. Slacken off the buttercream with cooled boiled water or any other flavouring a little at time until the butter cream as the consistency of warm butter. You may want to make the buttercream just a little looser for covering a cake rather than piping.
4. Take the bowl of the stand mixer and spend 5 mins gently beating the buttercream by hand with a spatular to removed air bubbles.

If you want this tasty recipe in cups: 2 1/5 cups milk 3 egg yolks 2 Tbs cornflour 2 Tbs castor sugar 1 tsp vanilla or more to your preference. Enjoy Thank you Katie for this excellent recipe!

I made this tonight with a boneless pork leg. The skin got crackling but it does not have a lot of fat and skin. The mest was tender and a little overcooked but ok as it is a pork leg. I think shoulder will be better next time. Thanks.

Is it 220 C for oven ? A bit confused by 22C fan.
I found about fan ovens.
When you give the oven temps as “fan”, do you mean fan bake or Fahrenheit - dumb beginner cook here 😩

I just made it and it reminded me of my childhood in England. I even made an apple crumble to go with it. Honestly I could eat it all by itself. Thank you for making my life better. Can’t get tins or powdered custard here in Louisiana

I usually buy mine in Lidl or Morrisons, I can’t remember exactly how much the joint was, but the shoulder is one of the cheapest cuts, that’s size would be less than £5 I’d estimate

I’ve let the skin on my pork to dry out in the fridge over night with salt on it to help draw out all the moisture of the skin. Can’t wait for later.

There not much juice tbh, I usually use beef dripping or a good rape seed oil for roasties, I also have a video for roasties if you wanna take a look 😌
