also the beveled edge should be talked about in depth. like ball weight in order to get a normal crust edge. It needs to go all the way out. Anything less is a flat bread pizza, not the best.

i wish you could switch out plates for different sizes.
If the machine open the dought , can you after open a little bit more with your hands the dought ?
Yep, example: make a 10" with a little thicker ball weight then a quick stretch by hand and your done. About 15 seconds per pizza. Much quicker using this BUT at a cost

Try using more water. The hydration here is too low to make a great pizza - it's even below 60%. Try going 65 or 70%. But it all depends on how quality yout flour is. Oh and your question, it's 1000+100 in this video.
